Does anyone out there watch The Voice as religiously as I do! I was having heart attacks this week when Carson was taking his usual 6 hours 30 seconds to announce the finalists! (I swear I feel like I’m holding my breath for hours when he says “And the finalist to move on to next week is………………………………………” Que breath holding.) I’m so nervous for next week…WHO IS GOING TO WIN IT ALL!?! That show surprises me each season so I hate to make a guess…but I feel like Cassadee might take the whole thing home! To be determined…
Okay, I know some people aren’t as obsessed with eggnog as I am…but you have to try these pancakes! Pretty Please! They are incredible! After tasting them I ended up doubling the batch, making them all and freezing them! A) Because they’re the best B) Because this little nugget could decide to make an appearance in this world at any time and I need to still have breakfasts for my little man. However, the problem arose, when I checked the freezer this morning and between my fiance and 18 month old…THEY’RE ALL GONE. Which basically means they’re awesome!
You should totally make these, this weekend, on Christmas morning, everyday..The cinnamon chips make.these.cakes! I don’t even need any drizzly syrupy yumminess..they’re perfect as is. But I definitely wouldn’t judge if you decided to add some more sugary goodness.. Elf style! 😉 Enjoy your weekend!
Ingredients
- 2 eggs
- 2-2 1/4 cups eggnog (depending on how thick you like your batter)
- 2 cups all purpose flour
- 1 Tablespoon sugar
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 2 teaspoons baking soda
- 1/4 teaspoon salt
- Cinnamon Chips
Directions
- In a large bowl, whisk together the eggs and the eggnog
- Add in the flour, sugar, cinnamon, nutmeg, baking soda, and salt. Mix until just combined.
- With a skillet preheated on medium, ladle on the batter.
- Sprinkle on some cinnamon chips.
- Flip once the pancakes are bubbling, and drying around the edges.
- Cook for 1-2 more minutes and serve!
