So we were driving to the pumpkin patch this past weekend and I started talking about the end of the month “in a couple weeks”…my husband gives me the side eye and says “uh, the end of the month is next weekend, this is the last week of October”…I actually had to check my calendar because I couldn’t believe it. Like, Im positive that October 1st was just yesterday and I only had my baby last week. But uh, no, that doesn’t seem to be the case. I have a 5 1/2 week old, Halloween is in five short days, Thanksgiving is only a few weeks away, and its time to get my butt in gear with Christmas shopping.

I mean, I know its the cliche of the century saying “time if flying” but seriously, TIME.IS.FLYIIIIIING. I thought it went quickly before, but adding a baby to the mix took it to a whooole new level. My days are a blur and all seem to run together, and not for lack of sleep because I actually have a champion sleeper with this babe. Anyone who ever invents a way to slow time down..gimme their number.

So since we’re almost into November here, is it getting to late for pumpkin recipes? Are we all looking for Thanksgiving recipes now? I don’t know about you, but Im still all about pumpkin at least until the end of November when eggnog tends to take over. Speaking of eggnog, I feel like people either love it or hate it, and I love it! I look forward to Starbucks’ eggnog latte every year!

But I digress. There is no shortage of pumpkin recipes on this here blog, but it never hurts to have more! This pumpkin bread has become a favorite this fall. I love the addition of the sweet cranberries which I think pairs so, so well with the spiced pumpkin. The smooth apple cider glaze is quite literally, the icing on the cake!

This bread is so quick and easy to whip up, my two year old (omg he’ll be three in december! when did that happen? see, I told you time is going to fast!) did most of this one! The bread is not overly sweet. It is warm and comforting, perfect with a hot cup of coffee for breakfast or an afternoon snack on cool fall day. You’ll love this one!

Cranberry Pumpkin Bread with a Cider Glaze

Prep Time: 15 minutes

Cook Time: 1 hour

Total Time: 1 hour, 15 minutes

Yield: 1 loaf of bread

Warmly spiced pumpkin bread with sweetened cranberries and topped with a smooth apple cider glaze..perfect with a hot cup of coffee on crisp fall mornings!

Ingredients

  • 1 1/2 cups all purpose flour
  • 1/2 teaspoon salt
  • 3/4 cup brown sugar
  • 1/4 cup white sugar
  • 1 teaspoon baking soda
  • 2 TB pumpkin pie spice
  • 1 teaspoon cinnamon
  • 1 cup pure pumpkin
  • 1/2 cup butter, melted and cooled
  • 2 eggs
  • 1 TB vanilla
  • 1 cup dried cranberries
  • glaze
  • 1 cup confectioners sugar
  • 2 TB apple cider

Directions

  1. Preheat oven to 350° and either spray a bread pan with cooking spray or line with a piece of parchment paper, enough to hang over the edges.
  2. In a large bowl, whisk together the flour, salt, sugars, baking soda, and spices.
  3. In a medium sized bowl, whisk together the pumpkin, butter, eggs, and vanilla.
  4. Pour the wet ingredients into the dry and stir until just combined. Fold in the dried cranberries.
  5. Pour the mixture into your bread pan, smoothing out the top. The batter will be somewhat thick.
  6. Pop in the oven and bake for 50-60 minutes until a toothpick inserted into the center comes out clean.
  7. Allow to fully cool before pouring on the glaze. (To make the glaze, simply whisk together the confectioners sugar and apple cider until smooth. If you like a thicker glaze, cut back to 1TB of cider.)
  8. Slice and enjoy!
