My poor little boy is so sick. We spent all night awake with him Wednesday night, and I spent all day yesterday holding him..it has been non-stop cries. He has a terrible fever, I can’t get him to eat anything, and hes being tough about getting fluids down. He won’t sleep for more than 45 minutes at a time, and the poor babe really needs it. He has some virus going around that is in his throat, and it breaks my heart to see him so sick and helpless. I would trade with him ten times out of ten. There is nothing worse than seeing your little one sick ๐
Before he got sick this week, he helped me make and inhale this incredible Cranberry Apple Syrup!!
I told you yesterday that I’m obsessed with Cranberries lately…and I truly am. I.can’t stop. I made this Cranberry Apple Syrup to have for different uses..but it might be already gone due to spoonful’s of it. maybe. This syrup is sooo fantastic! It can be used on pancakes or waffles, drizzled on top of a salad, added to a margarita or other drinks..cough..I may have made a mock-tail with it..(coming soon)..or you could do as we do and spoon it into your mouths..case in point.. ๐
This mess continued on for a good 20 minutes but was completely worth it..he was having fun and its always a blast watching him really enjoy something ๐
Make this, pour it over your breakfast or make a cocktail, get inventive, because this cranberry apple syrup is completely worth it..its amazing!
Ingredients
- 1 1/2 cups fresh cranberries
- 1 apple, peeled and quartered (I used a Gala apple)
- 1/4 cup white sugar
- 1/2 cup apple cider
- 1/2 cup water
Directions
- In a medium sauce pan over medium-high heat, combine the cranberries, apple, sugar, cider, and water.
- Stir until sugar has dissolved, bring to simmer and cover with the lid.
- Allow to simmer for around 15 minutes, stirring occasionally, until the cranberries have burst and the apples are soft enough to mash.
- Remove from the heat and blend with an immersion blender (or allow to cool and carefully transfer and blend in a blender or food processor) until pureed.
- Store in the fridge in an air tight container.
