A wonderful Winter Salad, filled with Citrus flavors, colorful fruit, and succulent steak!

Did you all have a fantastic Thanksgiving? I know it’s Tuesday and you’re probably already passed that holiday, and moved on to Christmas, buuuuut I’m still savoring the wonderful week. I flew out of Missouri over the weekend and back to Maine for a couple of weeks to visit family and celebrate my sons first birthday…gahh I can’t even handle the fact that he’s about to be one..it’s killing me. Good thing he’s super clingy right now..Im pretty much loving all the hugs, kisses, and snuggles. Please don’t let it ever end.
Anyways, flying to Maine with two kids alone with a connecting flight, I was pretty much freaking out. Last time I did it, I had help and it was still a complete disaster. Well my kids BLEW me away. Im not even kidding, I kept saying to myself, “uhh is this real life…are they both truly asleep..” yah. They sat there perfectly quietly snacking and talking and playing the first plane ride, were fantastic through the connection, and then both fell asleep before we even took off on the second plane and didn’t wake up until we landed. It was absolutely glorious. They were angels and I am so, SO grateful for them, and that they chose that day to behave so well. Thanks you God.
Since being back in Maine, staying at my moms is like being on vacation everyday. Dinners cooked for us, she does our laundry, endless supply of wine, fires, xmas music, decorations..my kids are in 7th heaven, and I’m not doing to shabby myself. Two weeks of this is going to be sooo nice. Though I seriously miss my husband.
Okay okay, moving on to the stuff that reallly matters to you..sorry, I can’t help but document those momentous occasions, I love going back and reading old blog posts..these are for me too ya know!? Also..my two year old calls ‘decorations’..”decoroni’s”…it’s probably, definitely the cutest thing I’ve ever heard. I love it so so much.
Okay! So Citrus Flank steak and Pomegranate Salad..I know this time of year a salad is really boring. But A) We still need to eat normal meals..we’re not on elf, we can’t survive on sugar alone (can we?) B) It’s like a mini detox to make up for all the cookies cakes and lattes your enjoying C) It’s so darn easy to throw together D) It’s really freaking good.
Do you need anymore reasons? Make it. Healthy lunches and dinners make me feel ten times better about all the wine. 😉
A wonderful Winter Salad, filled with Citrus flavors, colorful fruit, and succulent steak!
Ingredients
- 1 pound flank steak, sliced
- 1 large head of Romaine lettuce, rinsed, dried, and chopped
- 2 clementines, peeled
- 1 pomegranate, seeded
- 1/4 cup fresh squeezed Grapefruit juice
- 2 Tablespoons lime juice
- 2 cloves garlic, minced
- 1/4 cup freshly chopped cilantro
- 1 teaspoon salt
- 1 teaspoon cumin
- 1/2 teaspoon oregano
- 1/4 teaspoon crushed red pepper
- 2 Tablespoons light olive oil
- 4-5 Tablespoons freshly squeezed grapefruit juice
- 1 teaspoon dijon mustard
- 3 Tablespoons red wine vinegar
- 1 Tablespoon brown sugar
- 2 Tablespoons light olive oil
Directions
- To make the marinade, whisk all the marinade ingredients together,.
- Add the flank steak strips to either a gallon size zip-lock bag, or a large mixing bowl. Pour the marinade over it, and toss it around so all of the steak strips are covered. Set it aside to marinate for 30 minutes, tossing occasionally.
- While the steak is marinating, make the dressing. Whisk together the grapefruit juice, mustard, vinegar, sugar, and olive oil. Set aside.
- When done marinating, Heat a skillet over medium-high heat, and add the flank steak, discard the marinade. Cook for about 3 minutes on each side
- To assemble the salad, add the chopped romaine to a large bowl, place in the cooked steak, sprinkle with pomegranate arils, and add the clementine. Pour in the dressing, toss to mix and serve!
