Cinnamon, White Chocolate and Cranberries come together to create a super tasty and festive Rice Krispy Treat!
In the past I’ve always been one of those Don’t rush the holidays! No Christmas before Thanksgiving! But this year, I just cannot help it! For some reason, it feels like one big holiday this year and I can’t separate the two. Maybe it’s because Thanksgiving is later this year, so the Christmas season is a tad shorter? Not sure, but I don’t care, I’m loving it! Yesterday I cranked up the Christmas music, lit my winter candles, cracked open the eggnog, and had a little holiday dance party with my kids. I am so ready for all of it..bring it on!
These little Rice Krispies are super easy and festive, and your kids will love to help! My son is all about pouring in the add-ins to anything. (I think it’s partly because he snacks on them a little! 😉 ) These rice krispies are filled with cranberries, white chocolate, and a tad bit of cinnamon..you’ll love them for their ease, taste, and holiday festivity! They’re quick to throw together, and kids will go nuts for them! Both of mine did..even my husband, who is a self-proclaimed white chocolate hater, loved these.
Roll them into balls, pop in a stick..mess-free! Or pour them into a pan and slice them like typical rice krispies..either way, these little gems are a winner!

Ingredients
- 2 Tablespoons butter
- 5 cups mini marshmallows
- 1 1/2 cups white chocolate, divided
- 1/2 teaspoon cinnamon
- 6 cup rice cereal
- 1 cup dried cranberries
Directions
- In a large saucepan over medium-low heat, melt the butter.
- Once melted and the marshmallows and half a cup of the white chocolate chips
- Stir constantly, being sure to scrape the bottom and sides until fully melted.
- About halfway through the melting process, add the cinnamon and stir until its completely incorporated.
- Once everything is melted and there are no clumps left, turn off the heat, and add the rice cereal, cranberries, and remaining white chocolate chips.
- Stir until the marshmallow is sticking to everything and is all well mixed.
- Now you have two options, you can make them into bars by pouring it into a 9x13 pan that has been sprayed with non-stick spray and press firmly. Allow to harden and then cut. Option two would be to let it cool slightly, not longer than 3-4 minutes or it will start to harden, then grab about a 1/4 cup at a time and roll into balls! Enjoy!
