It was a rough week here for me. Stay at home moms, I don’t know how you all do it without going crazy! My hat is off to you! Whoever says that stay at home moms don’t work should just disintegrate and die. Ok so that’s a bit harsh, but they should at least trade places for one week, by the end they’ll be begging to go back to their job!  See, unlike “real jobs”, we don’t get breaks, we don’t get adult interaction, we don’t get to leave at 5 o’clock and come back the next day, etc.,…I’m not complaining, as hard as it is, I feel blessed to be able to stay home with my kiddos, but some days, I wish I had a break. I just don’t ever want to hear from someone again that stay at home moms don’t work. Biggest. Misconception. Ever.

If it wasn’t winter and -15 everyday, it would probably be a lot easier. Getting outside always makes kids happier and the fresh air makes me feel better.  It’s really hard to do that with a newborn. How far away is Spring?

Since we’ve been stuck inside, we try do a little bit of baking here and there. Cookies are quick, easy, and fun to do with my little guy, so they make a lot of appearances around these parts.

Last week I made these Cinnamon Raisin Walnut Oatmeal Cookies. Wow, that’s a mouthful! But so are these cookies! In a good way! Every bite has so much flavor! How could it not with all those fillings?! I’m obsessed with cinnamon chips, I keep buying stock in them before they sell out for the year. I’ve been eating bags of them like candy though, so I doubt they’ll last me until next season.

These oatmeal cookies are superb! Big, chewy on the inside, crispy on the out, and so delightful! Enjoy!

Cinnamon Raisin Walnut Oatmeal Cookies

Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup Flour
  • 3/4 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 1/2 cups old-fashioned oats
  • 1/2 cup cinnamon chips
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts

Directions

  1. Preheat oven to 350 degrees. Line baking sheets with parchment paper
  2. In the bowl of a stand mixer, fitted with the paddle attachment, cream together the butter and sugars, mixing for 2-3 minutes.
  3. Mix in the egg and vanilla.
  4. Sift in the flour, cinnamon, salt, and baking soda, mixing until almost incorporated.
  5. Stir in the oats, cinnamon chips, raisins, and walnuts until just combined.
  6. Scoop out into 1-2 inch balls and place 2 inches apart on the baking sheets.
  7. Bake for 8-10 minutes. Cool for 3-4 minutes before transferring to a cooling rack. Enjoy!
