Like, going in at 3 in the morning and not getting home until 6at night, then pretty much going right to sleep to do it all over again. It’s not supposed to last to much longer, but we’ll see. I’ve hardly seen him at all in the last week. He’s going to get a little break for the labor day weekend and I’m so excited! Are you doing anything crazy?

Chili-Lime Chickpea Salad | Fabtastic Eats Last year we had a big party with a giant slip and slide, (like 100 feet long, and 20 feet wide…it was a show!), and a backyard clambake. Sadly, we’re not around any of our family and friends this year, so I have a feeling it’s going to be much more low key!

Regardless of what you’re doing, or where you’re going, you should make this Chili-Lime Chickpea Salad! It’s a snap to throw together, like 15 minutes, and it tastes soooo fantastic! It’s a great make ahead dish, and actually, the longer it sits, the better!

Chili-Lime Chickpea Salad

Total Time: 15 minutes

A fresh and cool Chili Lime Chickpea Salad, that is perfect for lunches, snacks, or bringing to a backyard BBQ!

Ingredients

  • 2 Tablespoons olive oil
  • 1 lime, zested and juiced
  • 3/4 teaspoon chili powder
  • 1/4 teaspoon paprika
  • 1/4 teaspoon cumin
  • 1/8 teaspoon cayenne
  • salt and pepper
  • 2 cups frozen corn, toasted
  • 15 ounce can chickpeas, drained & rinsed
  • 1/2 cup fresh cilantro
  • 3 green onions, diced
  • 1/2 pint grape tomatoes, quartered

Directions

  1. In a medium sized bowl, whisk together the oil, lime, chili powder, paprika, cumin, cayenne, and a dash of salt and pepper.
  2. Add in the toasted corn, chickpeas, cilantro, onions, and tomatoes. Toss it all together.
  3. You can enjoy it right away, but its best if left in the fridge for a bit first, tossing occasionally. Even better the next day! 😉
