My husband leaves tomorrow morning. We went on our last date night in Maine last night, hitting up all of our favorite spots! It was really nice, and I savored every minute of it, because moving away from my parents means not having a babysitter every week! Wahhhh. Those who don’t have grandparents around, how do you find friends/girls/babysitters, that you actually TRUST with your kids? Babies specifically…I feel like I just could never leave them with a babysitter that I didn’t completely know. Looks like we won’t be going out again for awhile…
Moving on..can I just tell you how excited I am for Fall tv to start…I’m such a tv junkie, I have a loooong list of shows that I watch, and since so many of them are on at the same time, I physically write out a list of what show is on which day, at which time, and then prioritize, which show I want to watch that night, and which one Ill DVR. Problem with where we’re going for the next 16 weeks…THERE’S NO DVR!!!! (yes, that deserved caps and lots of exclamation points.) Thank goodness they put them online to watch the next day…but STILL.
omg so this pizza. Its awesome. Like so stinkin’ mouthwatering. The cheese, oy, my son was just taking bites off of the block of cheese. So tasty. It’s a pesto-gouda cheese that I picked up at Trader Joes. (If you can’t find it, I would try using a pesto sauce on here, with gouda cheese, won’t be quite the same, but pretty darn close.) This Chicken and Pesto-Gouda Pizza is wonderful, melty cheese, crunchy crust, tangy garlic. I loved every single bite. Plus the bright green cheese is kind of pretty!

Ingredients
- 1 lb. pizza dough (I used this garlic crust)
- 2 Tablespoons olive oil
- 1 Tablespoon minced garlic
- 1 chicken breast, cooked and shredded
- 2 cups shredded pesto-gouda cheese (I picked mine up at Trader Joe's)
- 2 Tomatoes, sliced
- 1/4 red onion, sliced
- Balsamic Glaze for drizzling
Directions
- Pre-heat your oven and pizza stone to 425 degrees.
- Roll out your crust and pre-cook it 3-4 minutes.
- Remove it from the oven and evenly spread on the olive oil, followed by the minced garlic
- Layer on the shredded chicken, sprinkle on the cheese, and place on the sliced tomatoes and red onion.
- Pop it in the oven for 8-10 minutes, until the crust is golden brown and the cheese is melty.
- Remove, slice, and enjoy!
