oh.meh.goodness. tomorrows thanksgiving! Wanna know what we’re doing?! I still don’t know yet! Bahaha Seriously though..we have been going back and forth with my fiances parents as to whether or not we’re going there or they’re coming here…for various reasons. I’m such a planner..and I like to be organized so I’m partly going crazy and partly saying C’est La Vie! At this point, I just want to eat and relax ..regardless of where we end up!
No matter what happens..there will be leftovers! And you know what you should make with those! THIS Chicken, Pear, and Brie panini! I used Chicken..obviously, but you should totally use the turkey, maybe even throw on some Cranberry Sauce..I bet that would be AWESOME.
The only way Ill eat turkey day leftovers is in sandwiches or some other form than what we had that day! I don’t like eating the same thing twice. I know..sil.ly. This panini is fabulous though! Wonderful flavors, great textures, and really, can you go wrong with sweet fruit and creamy brie together? I don’t think so!

Ingredients
- Slices of Bread
- 1 Tablespoon Butter
- Thin slices of brie
- Thin Pear Slices
- Shredded Cooked Chicken
- Dijon Mustard
- Salt and Pepper
Directions
- To assemble the sandwich, heat your panini maker or grill pan to medium-high
- Spread butter on both sides of your bread
- Pile on the brie, pear slices, chicken, drizzle of Dijon mustard, and salt and pepper
- Cook until the cheese is melted and the bread is golden brown
