I don’t know whats more comforting than soup on cold, dreary days. It warms you up, its homey, soothing, and best of all completely heart warming. We love soup in this house..whenever its chilly its the first thing my fiance requests, (or sometimes makes himself!) Soup is perfect when you’re not feeling well or when you have someone special who isn’t feeling so hot either, its a great dish to bring to them. Today, food bloggers are virtually sharing comforting food to those in need from the Frankenstorm…aka Hurricane Sandy.
Jenn of Jenn Cuisine and Barb of Creative Culinary encouraged food bloggers to come together to share their comforting dishes that could be delivered to those in need. Not only are many of the victims of Hurricane Sandy without power, but they got hit in the last 24 hours with another storm, full of snow, sleet, and freezing rain. They could all use a little comfort and care.

- American Red Cross is providing food, shelter, and other forms of support to hurricane victims. You can donate directly to the Red Cross or you can also text the word “Redcross” to 90999 to make a $10 donation.
- The Salvation Army is also focused on providing food, shelter, and support to victims, and takes donations for storm relief.
- Feeding America is providing food, water and supplies to those who need it as part of their disaster relief program.

Onto this incredible, comforting Chicken Enchilada soup! It was homey, warm, and so flavorful! It tasted just like a Chicken Enchilada but without all the work! It was a cinch to throw together and so so tasty!
It isn’t very spicy, because the milk tones it down, plus I used mild enchilada sauce since we have a wee one..but if you like some heat, kick it up! I highly recommend you add this Chicken Enchilada Soup to your dinner rotation ASAP! You will not be disappointed! Then make a little extra and deliver some to a friend 🙂
Ingredients
- 1 Tablespoon olive oil
- 1/2 yellow onion, diced
- 1 red pepper, diced
- 15 ounce can Rotel
- 4.5 ounce can green chiles
- 15 ounce can whole corn, drained
- 15 ounce can black beans, drained and rinsed
- 10 ounce can Enchilada Sauce (I used Mild)
- 2 cups Milk, divided
- 3 Tablespoons butter
- 3 Tablespoons Flour
- 1 cup chicken broth, divided
- salt and pepper
- 2 whole chicken breasts, cooked and shredded or 1 whole rotisserie chicken, shredded
- 1 cup Mexican cheese of choice (I used Monterey Jack)
- Sour cream (Optional)
- Cilantro (Optional)
- Extra Cheese (Optional)
- Tortilla Chips (Optional)
Directions
- Heat a soup pan to medium high heat and warm the olive oil.
- Add the diced onion and red peppers, cooking until tender, about 5 minutes.
- Pour in the rotel, green chiles, corn, and black beans.
- Add the enchilada sauce and 1 1/2 cups of the Milk. Stirring occasionally.
- In a small sauce pan, over medium heat, melt the butter.
- Once fully melted, add the flour, whisking constantly until thick.
- Pour into the rue, the remaining 1/2 a cup of milk and 1/2 a cup of the chicken broth.
- Add a few cracks of salt and pepper.
- Whisk constantly until the mixture thickens, it will take about 4-6 minutes.
- Once thickened, immediately add it to the soup.
- Add the remaining 1/2 cup of chicken broth and the cheese.
- Reduce heat to low and allow to simmer for about 30 minutes, stirring occasionally.
- Top with desired topping and serve! Enjoy!
