A quick and easy, cheesy chicken pasta with a greek yogurt sauce, drizzle of olive oil and fresh basil!

Cheesy Chicken Fettucine (in a greek yogurt sauce!) | Fabtastic Eats Awhile back, before my husband and I could agree on shows to watch together, we used to divulge in marathons of House Hunters and Chopped. Now we have a few more dramas that we enjoy watching together, though he still makes fun of most of my shows. oh well.

Cheesy Chicken Fettucine (in a greek yogurt sauce!) | Fabtastic Eats House Hunters was fun, because I’m nosy and love to see the inside of other peoples homes, plus it was fun to guess which home they picked for themselves. Chopped was intense but so cool to watch..seeing what they could do on a limited time with the strangest combination of ingredients. Some people were just born chefs.

We were given four different ingredients that we had to incorporate into a dish, thank goodness it wasn’t like the show, and they didn’t include something whack like goose liver or candy hearts. 😉 Totally normal and tasty things that I keep stocked at all times anyways!

Cheesy Chicken Fettucine (in a greek yogurt sauce!) | Fabtastic Eats I made a quick and easy, 30 minute, weeknight pasta, full of chicken, red peppers, fresh spinach, greek yogurt, and of course a 6 blend cheese, which my two year old was eating by the fistfuls. The kid is obsessed with cheese, and its goooood.

The dish comes together quick, and once plated is drizzled with a tad of good quality olive oil and a sprinkling of fresh basil. It closely resembles a tuscan pasta, and its delicious!

Cheesy Chicken Fettucine (in a greek yogurt sauce!)

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Yield: Serves 4-6

A quick and easy, cheesy chicken pasta with a greek yogurt sauce, drizzle of olive oil and fresh basil!

Ingredients

  • 12 ounces fettucine
  • 2 TB olive oil, divided (plus extra for serving)
  • 1 pound chicken breast, cubed
  • 1 red bell pepper, sliced thin
  • 1/2 teaspoon crushed garlic
  • 1/2 teaspoon crushed red pepper
  • 4 cups fresh spinach
  • 2/3 cup milk
  • 1/3 cup greek yogurt
  • 8 ounces Sargento shredded 6 cheese italian blend
  • salt and pepper
  • fresh basil, julienned (optional)

Directions

  1. In heavily salted water, cook the fettucine until al dente, drain and set aside.
  2. While the pasta is cooking, heat 1 TB olive oil in a large oven safe skillet, over medium-high heat. Add the chicken and cook through. (Be careful not to crowd the pan, you want your chicken to be golden brown on all sides.)
  3. Transfer the chicken to a bowl. Reduce the heat in the skillet down to medium and heat remaining 1TB olive oil. Add the red pepper, crushed red pepper, garlic, and a good dose of salt and pepper, toss well and cook until it chars slightly and begins to soften, about 5-6 minutes.
  4. In a small bowl, whisk together the milk, yogurt, 1 cup of cheese, and salt and pepper.
  5. Stir the chicken and spinach into the hot skillet until the spinach wilts. Using tongs, add the pasta and mix everything together.
  6. Reduce the heat to low, pour in the yogurt mixture and toss everything together slowly. Stir in some more salt and pepper. It will take a few minutes for the cheese to fully melt and the milk and yogurt to warm, but do not increase the heat, you don't want the dairy to curdle.
  7. Preheat your oven to broil. Sprinkle remaining cheese over the top of the pasta and place in the oven for 2-3 minutes until cheese fully melts.
  8. To serve, plate the pasta, drizzle with a smidgen of good quality olive oil and a small sprinkling of fresh basil. Enjoy!

Notes

To reheat leftovers, drizzle with olive oil before placing it in the microwave, when you remove it toss everything together. It adds great flavor and helps loosen the sauce and pasta!
