These cashew coconut protein bites? a little slice of heaven I tell yah. I have been gaga over all things cashews lately, they’re my favorite! And these little bites are SO good, you cant just stop at one…good thing in my head a serving size is 2!
These guys were inspired by a snack I picked up from Marhalls on a whim when I was out shopping with three kids (by myself) and was ravenous for something stat! I grabbed the bag, scanned the ingredient list, I could understand every word, and voom, ripped them open.
ahh my gah. after the first bite I knew I was going to recreate them. they were addicting. and so I did. These particular photos are my third batch of them, my moms made them multiple times as well, and can’t stop. She was here when I first started testing this recipe and fell equally as in love.
My husband grabs a couple every day on his way out the door and I legitimately look forward to these as an afternoon or post dinner snack.
Dare I say my recreation is even better than the store bought? I sure do. Not just the texture, which is perfectly chewy with a little crisp, but the flavor is better, and despite the fact that the store bought ones were organic, gluten free, and made with all good for you ingredients, these protein bites are even BETTER for you.
There are no added sugars or oils, they’re naturally sweetened, perfectly chewy and rolled in a crunchy cashew coconut mix. These little bites are a perfect snack that you can feel totally good about, store in your fridge for a week or two and are great for grabbing on the go!
Not to mention they totally taste like a cookie so they help my terrible sugar cravings! Make these, I promise you will LOVE them!
