Perfectly salted, Soft Pretzels stuffed with Creamy Brie, Caramelized Cranberries and Onions, and drizzled with Sweet Dulce de Leche! Your palate (and friends!) will go crazy over these!
It’s crazy to me that Football season is already half over. It’s crazy to me that Halloween is in two days… that we’re already near the end of 2013…didn’t we just ring it in, like last week? It’s crazy to me that my ten month old is walking..and that we’re changing our clocks already this weekend. It is crazy how fast time flies. I’m hating it. Slow down.
But back to my original point..Football! The Patriots are somehow winning games despite how badly they’ve been playing, I mean, Im not complaining but..uhh, get with it Pat’s. What I really care about is the food though. Football snacks are the best, I look forward to them all week. Pathetic, I know. But, I do. Soft pretzels are one of my favorites. There was this amazing pretzel shop in the mall back in Maine that was almost irresistible, you could smell it from a 1/2 mile away. They’re the bomb.
Soft pretzels in general rock my world, so when the wonderful people at Fleischmann’s Yeast asked me to try out their new Pretzel Creations, I obviously had to say yes! Needless to say, I was not disappointed. They give you everything you need in the little box, with the exception of water and a couple tablespoons of oil, but who doesn’t already have that lying around? They provide the pretzel mix, yeast, baking soda and pretzel salt..win! Plus it’s so easy and tastes just like your favorite soft pretzels!
The dough comes together in less than 5 minutes, seriously, and then only needs 30 minutes to rise. So if you’re not stuffing them with anything, you could have soft pretzels from start to finish, and in your mouth, in less than an hour! That’s amazing. It is so perfect for those of us who need a last minute snack for say, football games, or friends coming over. You can’t beat homemade pretzels…tell me someone who doesn’t love them!
I stepped it up a notch and made a Caramelized Onion and Cranberry Compote to stuff in there with my favorite creamy brie cheese…oh my gawd guys. These babies rocked my socks off. Then I drizzled them with some Dulce de Leche and literally sat on my floor for 20 minutes, shoving my face. The combination of the sweet drizzle, tart cranberries, caramelized onions, and salty pretzel was like heaven on earth.
I felt like I was eating a gourmet pretzel…I’m not kidding you with the Fleischmann’s Pretzel Creations, it’s genius, and it’s the only way I’ll go from now on. I am all about someone or something who takes the measuring out of the process, it cuts the time down, and these Pretzels turned out absolutely mouthwatering. You’ll be sure to see that handy box in my shopping cart more often.
Oh and stuff those suckers, because stuffed pretzels are my new favorite thing.
Disclosure: I was provided with a complimentary package of Fleischmann’s Simply Homemade Pretzel Creations. I was not compensated for this post. All thoughts and opinions are my own.
Perfectly salted, Soft Pretzels stuffed with Creamy Brie, Caramelized Cranberries and Onions, and drizzled with Sweet Dulce de Leche! Your palate (and friends!) will go crazy over these!
Ingredients
- 1 package Fleischmann’s Simply Homemade® Pretzel Creations™
- 3/4 cup warm water
- 2 Tablespoons olive oil
- 6 ounces creamy brie
- 1 egg, beaten
- ½ cup Dulce de leche
- 1 teaspoon milk
- 1 Tablespoon Olive Oil
- 2 Tablespoon Butter
- 1 large yellow onion, sliced (about two cups)
- ¼ cup balsamic vinegar
- 1 cup fresh cranberries, roughly chopped
- 1 Tablespoon brown sugar
- ½ teaspoon salt
- ½ teaspoon orange zest
Directions
- In a large bowl, stir together the pretzel mix and the yeast. Add warm warm and oil and knead until fully combined. Dough will be stiff, it helps to use your hands.
- Cover and allow it to rise for 25 minutes to rise. It will not double in size, so don't fret!
- While the dough is rising, make the cranberry-onion mix.
- To make the Caramelized onions and cranberries, heat a large skillet over medium-low heat.
- Melt together the butter and olive oil until shimmering.
- Add in the onions and toss to coat. Saute for 25-30 minutes until soft and golden brown.
- Add in the vinegar, chopped cranberries, brown sugar, salt, and orange zest. Stir to combine.
- Cover for 2-4 minutes, stirring occasionally, until the cranberries are softened and the liquid has been evaporated.
- Remove from heat and set aside.
- Divide the dough into eight equal portions.
- Roll each piece out flat into 12x3 inch rectangles.
- Line each rectangle across the bottom with sliced of brie, followed by 2-3 Tablespoons of the Caramelized Cranberries and Onions.
- Grabbing from the side furthest away from you, fold over the stuffing, overlap the dough, and gently pinch to seal. Don't forget to pinch the ends too!
- Roll into an even cylinder, form into a circle, grab both ends, twist them, and lay them over the opposite side to form a pretzel.
- Preheat oven to 400 degrees and line a baking sheet with parchment paper.
- Bring 6 cups of water in a deep saucepan to a boil. Add the baking soda provided in the Pretzel Creations box.
- Using a slotted spoon, dip pretzels, two at time, into the boiling water for 15-20 seconds.
- Remove from the water and transfer to the baking sheets.
- Brush each pretzel with egg wash and sprinkle with the pretzel salt.(also provided in the box!)
- Bake for 15-20 minutes until pretzels are golden brown.
- While the pretzels are baking, let's make your Dulce de leche soft and drizzly if it isn't already! Do so by combining 1/2 cup Dulce de leche and 1 teaspoon of milk in a bowl, and microwave it in 15 second increments until it reaches a consistency capable of drizzling.
- Drizzle over your pretzels and enjoy!
