Um so who didn’t tell me that Thursday was National Grilled Cheese Day!?! I had to figure it out halfway through the day by staring at some of the gooeyest, ooeyest, happiest, mouth-watering, grilled cheeses Ive ever seen! (Im totally a grilled cheese girl! Ive said it before, but Ive been crushin’ on this one from The Novice Chef for sometime now..I eat it no less than once a week!)
On a note totally unrelated to Grilled Cheese, (which I can’t stop thinking about. Clearly.) How was your weekend!? Mine was just dandy! (Do people still say dandy?) We went out for dinner Friday night with my parents, and I got to have my first Maine Lobster of the season..mmmmm good! Saturday we took our little man and, strapped him in and went and jogged Back Bay…which is a 3 and some change path around a cove of water in Portland..it was a beautiful day, and a gorgeous outing! Our little guy was passed out by the end!
We came home and had the best treat you could give a girl who just got her butt kicked by the workout! A BBQ Cheddar Turkey Burger, with Carmelized Onions, Avocado, corn on the cob, (or “corn on the bone” as my fiance likes to say!) and an amazing ice cold, raspberry wheat beer! Oh so delicious! It was such a treat, since Ive started the Couch to 5K, Ive given up beer, and next to Margaritas and Mojitos, there is nothing more refreshing on a hot day than an ice cold brew! Sunday we relaxed, BBQ’d and soaked up some sun! What a fab weekend!
So I guess I should get to the point here? This AH-MAZING, tastes-exactly-like-the-real-thing, California Bowl!! I love sushi, and I had gotten some last week for myself, (my fiance hates all things seafood!) and every since, I had been craving a Cal Roll..
Ingredients
- 1 cup cooked brown rice
- 1/2 an avocado, sliced
- 1 cup Cooked Crab slices, roughly chopped
- 1 Tablespoon Sesame Seeds, toasted
- 1/4 of a Cucumber, thinly sliced
- 2 Tablespoon rice vinegar
- 1 tablespoon soy sauce
- 1 teaspoon freshly grated ginger
Directions
- For the dressing, combine all ingredients in a small bowl and whisk to combine.
- Cook the rice according to packaged instructions
- Pour the rice into a bowl, toss with the dressing.
- Top with the avocado slices or chunks, cucumber, crab, and toasted sesame seeds.(To toast sesame seeds, put them in a small, dry, skillet on medium high heat for 3-4 minutes until golden brown, it will give them a nuttier flavor!)
