Every time Friday rolls around I start singing that song in my head by Rebecca Black, “It’s Friday. Friday, Friday!!” Seriously, every week without fail. Why do I like Fridays when Im home all week anyways? Because my husbands home for the next couple of days..three days this weekend! Thank you holidays! We do a lot of fun things that I don’t always dare do by myself with two little rambunctious nuggets. (talking about my kids here :P) We generally go out to eat a couple times on the weekends, Which makes life easier for me. Especially since we moved.
Ugh you guys should see the kitchen I’m working with here. I should show you a picture. But you probably won’t believe me. I’m oven-less, Ive got two burners, and the sink is so small the kitchen floor turns into an ocean every time I do dishes. Also, there’s no counter top space. My husband keeps saying “it’s only 16 weeks” But hes not home all day. And he doesn’t do the cooking or the cleaning in there. I think I’ve made two actual dinners in the last two weeks. It’s miserable cooking in there. I always end up throwing something. wahhhh
So this is my first time living on a Military base. So far, besides from the government shutdown, it’s been really great. I love the convenience of having everything right here, it’s like living in an awesome bubble, and there are like, EIGHT playgrounds within walking distance. They’re everywhere. It’s awesome. I take my kids daily for a few hours and it helps them burn off some serious energy. And I’ve learned this week, that it’s also a great place to make other momma friends.
I am not kidding when I say woman hand out their phone numbers like candy on Halloween. Everyone is SO friendly! Don’t get me wrong, I’m not knocking it at all, I’m actually in love with that fact, it’s great meeting people and its so nice to have some adult interaction. (Now if only we could talk about something other than our kids and the military….) But it just blew me away how nice they are, and how every single one wants to get together, go for a run, or schedule a play-date, it’s really nice, and it makes you feel right at home. …if someone wants to join me for happy hour, that would be sahhweeeet.
Alright! Butterscotch Pumpkin Spiced Loaf Cake. oh my lanta. At first I was calling this a bread. Then we kept eating it and eating it, and the soft, light, fluffy, crumbly, moist texture, paired with the sweetness of the butterscotch and the spiced pumpkin…I realized it was definitely more of a cake. If you’re thinking this can’t be a cake without a frosting, hear me out. I made one! A maple one in fact. And it was excellent. But this cake doesn’t need it! I’m serious, it’s already sweet enough, and flavored enough that the frosting probably would have been overkill. If you want to go ahead and add a frosting, all the power to yah. But taste it first, I promise, you will not be disappointed, and you’ll probably end up agreeing with me.
This Cake is the best thing ever. Like my most favorite pumpkin dessert I’ve ever, ever made. So there’s that.

Ingredients
- 4 eggs
- 1 cup sugar
- 1 cup brown sugar
- 1 cup vegetable oil
- 1/2 cup unsweetened applesauce
- 15 ounce can pure pumpkin
- 3 teaspoons cinnamon
- 1/2 teaspoon nutmeg
- 1 teaspoon ground cloves
- 2 teaspoons pumpkin pie spice
- 2 teaspoons all-spice
- 2 cups all-purpose flour
- 1 cup whole wheat flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 2 1/2 cups butterscotch chips
- Cooking Spray
Directions
- Preheat oven to 350 degrees. Line two loaf pans with parchment paper. Spray with cooking spray.
- In the bowl of a stand mixer, fitted with the paddle attachment, beat together the eggs and sugars until smooth.
- Add the oil, applesauce, and pumpkin. Mix in the cinnamon, nutmeg, ground cloves, pumpkin pie spice, and all-spice. Mix until well combined.
- Add the flours, salt, and baking soda, stirring on low until just combined.
- Stir in the butterscotch chips.
- Divide evenly between the two lined loaf pans. Pop in the oven and bake 50-60 minutes, or until a toothpick in the middle comes out clean. Enjoy!
