You know how bad it smells when you spill milk in your car? No? Never happened to you? Well consider yourself darn lucky. I have never once let my kids have any kind of milk or juice in the car, water only. Even “no-spill sippy cups” because seriously, spilled milk in the carpet, turns to sour milk, and its most definitely the worst smell ever. And there isn’t really a way to get it FULLY out.
So, for the last two weeks in a row that I’ve gone grocery shopping, the milk has exploded all over on our way home..what gives? I almost cried yesterday when I had a tired baby, an armful of groceries, and all of a sudden milk everywhere. Last week it happened, my husband was home…much more helpful, but still gross. This week it was me, myself, and I…and what.a.mess. SO I brought it all inside, unloaded it, then grabbed my 11 month old, plopped my 2 year old in front of a movie..and took cleaning supplies out to my car. So fun. The worst part, I locked myself out. So trying to stay as calm as possible while getting my two year old to come over and open the door. I was freaking out.
Let’s just say yesterday was a long day, and by 4 o’clock, I had a cocktail in my hand and was Skyping with my best friend. Virtual happy hours are the best by the way, highly recommend.
So let’s talk this Butternut Squash, Sweet Potato, and Carrot Soup. Because it’s fab, and you’ll love it. It’s super healthy, fairly quick, and really easy. Basically you chop, which is the longest part, saute, cook, then puree. Easy peasy I tell yah! My kids loved it, my husband enjoyed it as a side to a sandwich, and I ate it with some crusty baguette. I’m sure it looks and sounds like Thanksgiving, but I’ll eat this all winter long, I love a good cozy, creamy soup!
Healthy, Light, naturally sweet and savory soup made fresh with sweet potatoes, carrots, and butternut squash, seasoned to perfection! Makes an excellent side to a sandwich or salad, or for dinner with a toasted baguette!
Ingredients
- 2 Tablespoons extra light olive oil
- 2 cloves garlic, minced
- 1/2 yellow onion, chopped
- 1 apple, chopped (about 2 cups)
- 1/2 teaspoon cayenne
- 1 Tablespoon fresh parsley, minced (plus extra for garnish)
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon cinnamon
- 1" fresh ginger, grated
- 1/4 teaspoon salt
- 1/4 teaspoon cracked pepper
- 4 cups chicken or vegetable broth
- 4 cups chopped butternut squash
- 1 pound carrots, peeled and chopped (about 3 cups)
- 2 large sweet potatoes, peeled and chopped
Directions
- Heat a large sauce pan over medium-high heat. Add the olive oil and heat until shimmering.
- Add the garlic, onion, apple, cayenne, parsley, cumin, paprika, cinnamon ginger, salt, and pepper.
- Stir to fully coat and cook for five minutes, stirring often, being sure not to let it burn. Turn down the heat to medium if it's getting to hot.
- Add the chicken or veggie broth, squash, carrots, and sweet potatoes, bring to a simmer, cover and cook for 30 minutes, until soften, stirring occasionally.
- Once the veggies have softened, either use an immersion blender and blend until smooth, or carefully pour the soup into a stand blender, being careful not to splatter the hot soup, and puree.
- Serve with a baguette and enjoy!
