Blueberry Ricotta Waffles | Fabtastic Eats Hi July 1st. You got here rather quickly. Let’s slow down shall we? I’m not quite ready for labor day and all things pumpkin quite yet. Pump those breaks.

Are you loving every single aspect of Summer as much as I am? I expect that you totally are. Except for the crazy lady at Target the other day. She was going on and on about how she LOVES THE RAIN! Like, she actually said “I look forward to rain, and I just cant get enough of it.” Oomph. Like I said, crazy lady.

It’s bright out by 4:30 every morning, and it stays that way until about 10:30 every night. Like legitimately bright. Kids are out playing so late because the sun is freaking still out! It’s insane. But a good insane, I love it.

Breakfast, lunch, and a late night snack all include them in one form or the other. Daily. Usually in their purest, perfection. I wicked love them. And these waffles? I wicked love them too!

They’re almost cake-like with fresh blueberries, a hint of orange (zest!), and drizzled with real maple syrup, (bonus points if you have blueberry maple syrup!)..brunch perfection! Add a side of bacon, hash-browns, maybe an egg or two..and don’t forget your Mimosa(s)!! 😉

Blueberry Ricotta Waffles

Cook Time: 5 minutes

Total Time: 15 minutes

Yield: 4 Large Waffles

Pillowy Ricotta and Blueberry Waffles, almost cake-like with a citrus zing! Drizzle with syrup for an easy and tasty breakfast!

Ingredients

  • 3/4 cup Ricotta
  • 3/4 cup buttermilk
  • 1 egg
  • 1/4 cup sugar
  • 1 cup cake flour
  • 2 teaspoons baking powder
  • 1/8 teaspoon salt
  • 1/2 cup fresh blueberries
  • 1 Tablespoon orange zest
  • Cooking Spray
  • Maple Syrup for drizzling

Directions

  1. Heat up your waffle iron.
  2. In a large bowl, mix together the ricotta, buttermilk, and egg. Stir in the sugar.
  3. Add the flour, baking powder, and salt. Stir until just combined.
  4. Fold in the blueberries and orange zest.
  5. Add to waffle iron and cook in 1/3 cup increments.
  6. Drizzle with maple syrup and additional fresh berries if desired and enjoy!
