Soft and chewy, sweet and tart, heavenly blueberry and cream cookies!
holy moly guys…we’re already in the second half of august, which means summer is quickly coming to an end! I know so many kids went back to school this week, I just can’t believe it. The kids in our neighborhood have an extra week, so we’ve been letting the boys stay out much later than usual, running wild with everyone in an effort to enjoy the last bits of summer! Maybe it’s just because Im pregnant, but this summer was the quickest of them all, hands down. I can’t believe how fast it went by!
It was a fun one, but a verrry hot one here in the PNW, and I’d be lying if I said I wasn’t ready for Fall now! Being pregnant in the summer is no picnic, and any of you who do it in the south in the crazy heat, my hat is off to you! We did so many projects this summer and did lots to get ready for this third little bambino coming in less than four weeks. eek!
We ate lots of our favorite summer foods, and 90% of our dinners were grilled, which is definitely one of my favorite things about summer, along with all the fresh fruit! I will definitely miss that. Costco sizes of everything were always stocked in my fridge, and Ill be sad to see it all go out of season. Especially blueberries! They were part of many meals and snacks everyyy day! Like these tasty cookies!
I know being pregnant, I should be extra limited my sugar intake, but I can’t help it, all three of my pregnancies give me a sweet tooth like you wouldn’t imagine. Cookies have been a nighttime routine…I’ll worry about it all after the baby gets here! 😉
These were a favorite of mine! I love white chocolate so much, and paired with the blueberries, it was made it heaven!
I would recommend storing them in the fridge due to the blueberries, but then popping them in the microwave for a quick 6-10 seconds, makes them ooey, gooey deliciousness! I first shared this recipe over on food fanatic, but you can find it below as well!
