My husband has recently become obsessed with candy crush. He’s a little late to the game, I know, but ohmygod he loves it. We have been spending countless hours every night catching up on this entire season of How I Met Your Mother, and he plays, like the entire time.
Also, we may have finished the entire season in about four nights. It’s hilarious. I will miss it. And admittedly, I cried at the season finale. I STILL can’t get it off my mind, and I’m on the side of not happy with it. I heard there is an alternate ending coming out..we’ll see.
So candy crush. I can’t stand the constant Facebook invites I get..I think Ive even deleted people who invite me alll the time! Like I really need one more thing to suck up my time.
I’ve been on a book reading bender. It’s pretty bad. My husband was wonderful and spent the entire day outside on Sunday with the kids, while I was a little under the weather, and I got to read an entire book, start to finish. It was ahhhmazing.
Basically I never want to stop reading now, like ever, so I have to physically keep myself from beginning another book until I’m caught up on everything else. Although, if I’m being honest, I’m never, nor will I ever be, caught up on anything.

I’ve mentioned before how much my kids and I love to snack all day long..I try to find healthier options so it’s not all bad. 😉 I love anything mini..and muffins are perfect!
Especially for portion control! These little muffins have so much greatness going on! Coconut(!), Blood Orange, a sweet glaze, with added flax, and oats with whole wheat flour!

Healthy, easy, quick, and loaded with flavor, these mini muffins have sweetness, tang, and freshness, that make an excellent snack or breakfast!
Ingredients
- 1/4 cup unsweetened applesauce
- 1/4 cup coconut oil, melted
- 3/4 cup coconut almond milk
- 2 Tablespoons blood orange juice
- 1/2 cup brown sugar
- 1/4 cup honey
- 1 egg
- 2 Tablespoons blood orange zest
- 1/2 cup rolled oats, blended to a powder
- 1 cup whole wheat flour
- 1/4 cup ground flax
- 1 teaspoon baking powder
- 1 cup coconut flakes
- cooking spray
- 1 cup powdered sugar
- 2-3 Tablespoons blood orange juice
Directions
- Preheat oven to 350°. Spray a mini muffin pan with cooking spray.
- In a large bowl, combine the applesauce, oil, milk, and juice. Whisk in the brown sugar, honey, egg and zest.
- Add the powdered oats, flour, ground flax, and baking powder. Fold in the coconut flakes.
- Fill muffin tins about 3/4 the way full, and bake for 9-11 minutes, until a toothpick stuck in the middle comes out clean.
- Cool the mini muffins completely before dipping them in the glaze.
- To make the glaze, combine the powdered sugar and 2 TB of the fresh squeezed blood orange juice. Dip a muffin, if it seems to thick, add additional juice, 1/2 teaspoon at a time. Dip all the muffins and set. Dig in!
