If you had asked me if I liked Black Beans three months ago..I would have gagged at the sound of it..and then said “Ewwww beanss…grosss” Drew on the other hand has always LOVED them. Since I refused to every cook anything with them..he was left on his own. He would cook up a can of black beans..pour them in a bowl, and top them with salsa, sour cream, and brown rice. (Sorta like a burrito…minus all the delicious goodies!) Ew.
Anyhoo…a few months ago he finally convinced me to give black beans another try. hmph. So I made Black Bean Soup in a bread bowl. (Everything is better with carbs :P) Turns out, I LOVE black beans..that soup was probably one of the best I ever had. For Reals. So when I saw these Black Bean Burgers, knowing Drew loves black beans and I apparently have a new found like for them…I had to give them a shot. Oh meh goodness. SO GREAT! I hardly noticed it was meatless! It was nice and crispy on the outside, moist and extremely flavorful on the inside! It was SO filling, I couldn’t even finish it! You want these. Make them!
Ingredients
- 16 ounce can black beans, rinsed
- 1 cup diced green peppers
- 3 garlic cloves
- 2 Tablespoons red onion, diced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon onion powder
- 1/4 cup minced cilantro
- 1/3 cup diced roasted red peppers
- 1 egg
- 1 cup panko
- Ciabatta Rolls
- Slices of provolone cheese (optional)
- Tomato (optional)
- Lettuce (optional)
- 1/4 cup Non-fat Plain Greek Yogurt
- 1 teaspoon Sriracha
- 2 teaspoons minced Cilantro
Directions
- Preheat grill pan on medium-high heat.
- Add to a food processor the black beans, green peppers, garlic cloves, and red onion. Pulse until pureed. Transfer to a medium sized bowl.
- Add the egg and mix well.
- Add to the bean mixture: the cumin, chili powder, onion powder, cilantro, and roasted red peppers. Mix thoroughly,
- Add the panko and mix to combine.
- Form patties and cook for 3-4 minutes on each side.
- Transfer to rolls and top with Sriracha sauce!
