Wonderful Sweet Potatoes, topped with tangy BBQ Pulled Pork, sweet and salty Nectarines and Feta, make for a quick and absolutely tasty meal!
We are officially 100% out of our house. We spent three, 10 hour days, cleaning, organizing, and purging like crazy last week, then the movers came Friday, packed it all up and took off with everything we own, with the exception of a suitcase of clothes. And just like that, after months of anticipation, it was over. Next comes the two weeks we’re staying at my parents house, which is awesome by the way..laundry was washed and folded for me, dinners, made. Live-in babysitters. Unlimited amounts of wine…yah, it doesn’t suck here. At all. After this will be 16 weeks in Missouri, then finally Seattle. So I suppose there is a lot more to anticipate, but it feels like its all finally happening. Its really bittersweet. We’ve already had to do our first set of good-byes, and its sad, but I am really looking forward to the next Chapter of our lives!
Ok, done being sappy! This weekend officially kicked off Football Season! My husband was like a giddy little kid on Christmas morning yesterday. He was so ecstatic, it was cute 😛 I thought he was going to have a heart-attack during the Pats game yesterday, but, they pulled through, sloppily.
With Football season comes yummy, awesome, splurge-worthy tailgate food…aka my favoritest part. These BBQ Pulled Pork Sweet Potatoes are ah.maz.ing. And perfect for football Sundays! They have all the flavor, the texture, and generally pretty healthy, if you’re trying to watch it, or save room! 😉 Stuffed Sweet Potatoes are one of my favorite meals. They’re so cute all packed into one bundle, and you can do so much with them, they’re a huge love of mine for sure. These ones with the BBQ Pulled Pork and the Nectarine salsa, they just.work. It may seem like a strange combo…Sweet, salty, crunchy, tangy…you’ve got it all, but I promise, you’ll love it.

Ingredients
- 2 large sweet potatoes
- 1 cup BBQ Pulled Pork
- 1 nectarine, diced
- 1/8 cup crumbled feta
- Cilantro (optional)
Directions
- Scrub the sweet potatoes and poke a few holes in them with a fork. Wrap loosely with a paper towel and pop in the microwave on high for 10-15 minutes, until soft.
- While the sweet potatoes are in the microwave, toss together the nectarine and feta.
- Let them cool for a few minutes, then slice them down the long part, almost to the bottom, but without cutting them in half completely.
- Top with pulled pork and some of the nectarine-feta salad. Sprinkle with cilantro. Drizzle on extra BBQ sauce if you'd like, but we loved it as is!
