We had a really long weekend full of working. Both of us. Which means we had no time to spend with out little man, so we dedicated all day
Monday to running our errands and hanging out with our boy, so I truly did not want to spend hours in the kitchen today, away from him, again. So I didn’t. I pulled out my handy-dandy little crock pot. To be totally honest, I never had a crock pot, nor did I ever want one. I always had the impression that whatever came out of crock-pots was like “hamburger helper-esque.” I related crock pot food to boxed food, boy was I wrong. So wrong. My boyfriend came home with a crock pot one day, I just looked at him funny, threw it in the closet and it stayed there for a while. Then one day I needed a dinner, but knew Id have no time to make one, so I pulled it out and realized how easy and handy it can be once I had a baby boy, and I have seriously made some of the most amazing meals in that thing. When I have to work a night shift, since I go in at 7pm, I throw items in the crock pot, and when I wake up to go into work, its already to go, Its seriously like magic. Its stupendous. Definitely. So if you don’t have one, get one. And if you don’t want to spend lots of money, don’t. Check Goodwill, they always have them there, some even brand new, still in the box, keep your eye out. Go today. You will be so happy!
We had so much to do yesterday, I just didn’t have the time to spend in the kitchen, and I knew I wouldn’t! So before we left for the day, I threw it all in the crock pot and it was basically ready when we got home. Sometimes, not often because cooking is my favorite thing to do other than spend time with my two boys, but sometimes, a crock pot, no work, and simple is just the way I like it.
I’ve never really loooved pulled pork sandwiches, they make the bread soggy, and I hate anything soggy. But this bread, the Knotted Challah Rolls, (we got it at Trader Joes) didn’t get soggy, which was fabulous! And this pulled pork was so very delicious! The apple juice was such an amazing infusion. I used 100% apple juice, not bottled so that it wasn’t watered down, and it was SUCH a great idea. I’ve had quite a few cans of it in my freezer since I delivered my babe, for some reason, the minute I delivered I had an instant craving for apple juice, (aren’t you supposed to have those when you’re pregnant, not postpartum? ha!) and it continued for about 3 months, so I had lots left over! Any-who, add the juice, it was REALLY flavorful! This was so quick and easy, throw it all in the crock pot, turn it on low for 8-10 hours, and go about your day, come home and EAT UP! Enjoy!
