Awhile back I had read this silly term called a ‘book hangover’..I didn’t even get what it meant, and it sounded kind of nerdy to me. I pretty much just brushed it off with a laugh.
That is, until I started and finished The Fixed Trilogyin 48 hours this past weekend. I mean it, I could not put it down. I stayed up way to late Friday and Saturday, and got a ridiculous sunburn from just sitting outside reading all day. But holy moly, was it all worth it.
The set was $0.99 on Amazon for the Kindle, which is pretty much why I bought it to begin with. But within reading the first few pages, I was hooked. And I couldn’t stop at all..I even had dreams about the characters in the books when I finally did get some sleep. I know.
It was hot, and full of angst, love, deceit, lies, passion, manipulation, hate, romance, suspense, games..it was a page turner. I was expecting it to be like 50 Shades of Gray, but just no. I’m a huuuuge fan of that series, and in my opinion, this one blows that one out of the water. The Fixed Trilogy has so much more to it..the storyline is addicting and I just couldn’t get enough.
My original point? A book hangover, I finally totally get it. Although the series finished well, I was sooo bummed that it did end. I just wanted it to keep going and going. Thankfullly, there is a fourth book coming out in July, from the male characters point of view. I’ve already pre-ordered it and plan on re-reading the series right before it gets delivered to my kindle app. love love love.

The muffins, though they’re not the prettiest, they are fantastic! They’re complete perfection when warmed up just slightly right before inhaling one. And they are excellent with your coffee for breakfast, or as a late night snack. Trust me on that one!
They’re made entirely with whole wheat flour, and I tried to keep that as light as I could so we don’t feel tooo guilty! Regardless, they’re light, airy, moist, so full of chocolate, and pretty addicting. We polished them off pretty quickly!

Ingredients
- 2 cups whole wheat pastry flour
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1/3 cup coconut oil, melted and slightly cooled
- 3/4 cup unsweetened applesauce
- 1 cup coconut sugar
- 2 Tablespoons honey
- 2 bananas
- 3 eggs, beaten
- 1 teaspoon vanilla bean paste (or vanilla extract)
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1 cup dark chocolate chips
- Cooking Spray
Directions
- Preheat oven to 350° and spray a muffin tin with cooking spray
- In a medium sized bowl, add the flour, baking soda and powder, and salt. Whisk together and set aside.
- In a large bowl, stir together the coconut oil, apple sauce, sugar, and honey.
- Add the bananas, and mash them well with a fork or potato masher. It's fine to have a few chunks if that is your preference.
- Mix in the eggs, vanilla, cinnamon, and nutmeg.
- Add the flour mixture, and stir until just combined.
- Fold in the chocolate chips
- Spoon the batter into the sprayed muffin tins about 3/4 the way up the sides. As you can see the muffins don't rise that much, so I had zero issues with overflowing.
- Pop in the oven and bake for 25-30 minutes, until a toothpick inserted in the center comes out clean.
- Allow to rest for 2-3 minute before transferring them to a cooling rack. Enjoy!
