I hope you all are enjoying what is left of Summer! I certainly am, which could explain my absence around these parts as of late! It has been flying by! I feel like I’ve said that a million times this Summer, I probably have, but I just cannot get over how fast this season went! Phew…onto the next adventure in just over a month..bring it on!
These wraps are so simple, yet so incredible. I’m always looking for quick and easy lunches during the week. If they’re not simple, they usually don’t happen. I’m notorious for skipping lunch. It’s bad, I know. Then the 3pm fall hits me hard and I’m reaching for everything sweet that I could possibly find. I’m working on that.
But these wraps are perfectly quick, healthy, and insanely delicious. My husband and I have been hooked on them. We seriously have not stopped eating them. You can mix it up how you like, but the addition of some Feta and/or blue cheese as well as a Dijon vinaigrette on top of an already perfectly classic sandwich just pushes it over the top.
Next time you’re looking for a quick lunch or dinner, because we’ve been known to eat these for dinner too, make them, I promise, you’ll love them. They’re a favorite around here! P.S. The Vinaigrette is killllerrr..I’ve been putting it on EVV.RYY.THIIIIING.
A favorite classic of Bacon, Lettuce and Tomato with Avocado tossed in a Dijon Vinaigrette! A quick, easy, lunch, and favorite of mine!
Ingredients
- 6 slices bacon, chopped
- 1 avocado, diced
- 1 large tomato, diced
- 1 head of romaine, rinsed, dried, and chopped
- 1/4 cup blue cheese crumbles and/or Feta (I use a mix of both, my husband just loves the blue cheese!)
- 2 large tortillas
- 1/4 cup olive oil
- 2 Tablespoons red wine vinegar
- 1 Tablespoon Dijon
- 1 Tablespoon honey
- dash of salt and pepper
Directions
- In a medium sized skillet, over medium-high heat, cook the chopped bacon until crispy. Remove from pan and transfer to a large bowl.
- Add the the bowl of bacon, the avocado, tomato, and romaine.
- In a small bowl whisk together the olive oil, red wine vinegar, Dijon mustard, honey, salt and pepper.
- Toss the dressing over the salad.
- Sprinkle your cheese onto each tortilla. Toss on some salad, roll up and enjoy!
Notes
Can easily be doubled or tripled!!
