Asparagus with Lemon-Garlic Dip

I know this is asparagus, and vegetables can be really boring. BUT this beautiful green asparagus, which happens to be my favorite veg, comes with incredible healthy lemon garlic sauce! It’s made with coconut milk and its absolutely fabulous. If you’re anything like me, and trying to slim down a bit for Summer, but loooove snacking, and I REALLY love it, sometimes I’m perfectly okay snacking on vegetables, (15 year old me is going “WHAAAA?!”, then you’ll love this.

Asparagus with Lemon Garlic Sauce

I call this a dip, because I literally sat there, dunking my asparagus in this lemony, garlicky, goodness. I mean, why not? We dip tons of other vegetables in dip when we make veggie platters and such, who ever thought it was a good idea to leave out asparagus? Not me. So I’m adding it. This is so light and refreshing, crunchy, citrusy, creamy, it has a sliiight hint of coconut, and is simply delicious.

This will be perfect for BBQ’s  and parties this Summer! To serve, you could just drizzle the sauce directly over the asparagus and get to crunchin’! Now come back Friday for something sweet! 😉 Life is all about balance!

Asparagus with Lemon-Garlic Dip

Prep Time: 15 minutes

Cook Time: PT2-4M

Total Time: 20 minutes

Asparagus with Lemon-Garlic Dip

Wonderful, bright, crunchy asparagus, dipped into a tangy and citrusy Lemon Garlic Sauce!

Ingredients

    For the Lemon Garlic Sauce
  • Zest of 1 lemon
  • Juice of 1/2 a large lemon
  • 3 Tablespoons Full Fat Coconut Milk
  • 1/4 teaspoon sea salt
  • 2 Tablespoons Cilantro, minced
  • 1 garlic clove, peeled and grated
  • 1 bunch of asparagus, trimmed

Directions

  1. In a small bowl, whisk together all the ingredients in the lemon garlic sauce.
  2. Set In fridge until ready to serve.
  3. Fill a large pot and heat to boiling. Meanwhile, fill a large bowl with ice water.
  4. Once the water is boiling, toss in your trimmed asparagus, half of the bunch at a time.
  5. Allow it to cook for 2-3 minutes, until its bright green, then remove and immediately soak them in the ice water to stop the cooking process.
  6. Remove and pat dry with paper towels.
  7. Repeat until all your asparagus are ready!
