Yesterday was National Cookie Day..I hope you all ate cookies! I certainly did! ๐ So today I thought Id give you something a little lighter, but still sweetly fabulous! I love fruit..I seriously eat so much of it..and Ive passed that obsession down to my son. Between the two of us I swear sometimes I make extra trips to the grocery store just for more fruit!
We snack on it all day long..its a great answer for when I’m craving something sweet! Fruits natural sugar makes me feel so much better about eating so much of it..and making endless smoothies! I love all the different fruits every season!
Pears have always been one of my favorites..since I was really little, I always remember asking for them..we have been inhaling them like there is no tomorrow! So of course it was the first thing I thought to start with when making a little Autumn fruit salad. Ive always loved cranberry juice, but have really taken a liking to just snacking on whole cranberries, I love the tartness. Apples were just a given, because we love them! ๐
Combine the apples, sweet pears, and tart cranberries..add a little cinnamon, honey, and lemon juice, and you’ve got yourself one perfectly sweetened autumn fruit salad, that is a great, healthy snack so you won’t feel as guilty eating all these wonderful cookies and holiday treats! This Apple Pear Slaw is a wonderful combination of flavors that you will definitely enjoy!
Ingredients
- 1 medium apple, unpeeled and cubed
- 1 medium unripe pear, unpeeled and cubed
- 1/2 cup fresh cranberries, chopped in half
- Juice of 1 large lemon
- 1-2 Tablespoons honey
- 1/2 teaspoon cinnamon
Directions
- In a medium sized bowl, whisk together the lemon juice, honey, and cinnamon.
- Add the cut up apple, pear, and cranberries
- Toss to fully coat,
- Store in the fridge in an airtight container for up to 2-3 days.
