“As far back as I can remember, I always wanted to be a gangster” I love that movie. Ray Liotta is nuts, plus I have this crazy obsession with mob movies. Okay but seriously, as far back as I can remember, my mom has been making us oatmeal. She always made it every morning for us before school, alternating with cream of wheat.

It was always the same milk and brown sugar..don’t get me wrong, I still love it that way and Im beyond grateful that I wasn’t left with cold cereal everyday, although now thats one of my favorite snacks, but sometimes, variety is the spice of life! 😉

I love this Apple-Cranberry Oatmeal Bake. It’s wonderful served hot with milk or it doubles as granola and is great over yogurt. It is perfectly sweet, slightly crunchy, and is bursting with cinnamon, soft apples, and fresh, tart cranberries.

The day I made this, my mom came over and we took the boys for a walk. When we got back, she served herself a small bowl and went back for seconds (& thirds!) proclaiming how good it is! I drizzles a little bit of maple syrup over mine for added sweetness, but she loved it perfectly as is!

This oatmeal bake can be prepared the night before and just popped in the oven when you wake up! It’s perfect for when you know you’re going to have company or if you just want to enjoy a lazy weekend morning! Give this one a try, you won’t be disappointed!

Apple-Cranberry Oatmeal Bake

Prep Time: 15 minutes

Cook Time: 45 minutes

Total Time: 1 hour

Yield: 4-6 Servings


  • 2 Apples, peeled, cored, and cubed (I used Gala)
  • 1/2 cup fresh cranberries
  • 1 1/2 teaspoon cinnamon (divided)
  • 1 teaspoon nutmeg (divided)
  • Pinch of ground cloves
  • 2 1/2 cups old-fashioned oats
  • 1/8 teaspoon salt
  • 4 Tablespoons brown sugar
  • 1 teaspoon vanilla
  • 1 cup milk (plus more for topping)
  • Maple Syrup (optional)


  1. Preheat oven to 350 degrees
  2. In a medium bowl combine the apples, cranberries, 1/2 teaspoon cinnamon, 1/2 teaspoon nutmeg, and the ground cloves.
  3. Toss to fully coat and set aside.
  4. In a large bowl mix together the oats, 1 teaspoon cinnamon, 1/2 teaspoon nutmeg, salt, and brown sugar.
  5. Stir in the milk and vanilla.
  6. Once the oats are fully moistened add in the fruit mix and toss together.
  7. Pour into an 8x8 pan and bake for around 45 minutes, until the apples have softened and the cranberries have burst.
  8. Serve warm with some milk splashed in it and maple syrup drizzled on top, for an added bit of sweetness. Enjoy!


As leftovers its great either heated up and prepared the same way or used as granola on top of some yogurt! Enjoy!
