My kids ask for pancakes or crepes at least 4 days a week. That’s not to say they always get them, I do try to keep their diet pretty balanced for the most part, but I really can’t blame them for loving the good stuff! I’m pretty sure there was a time where I lived off crepes, either drizzled with syrup and brown sugar or loaded with fruit yogurt, I could eat them for every meal of the day.
But that was well before I even knew what gaining weight meant and I probably hadn’t even developed hips yet..you know, back when cookies and ice cream were a food group. Boy oh boy how things have changed. But I digress.
Every time I would make the kids pancakes, Id try a new recipe, and most of them involved whipping egg whites, which I don’t mind doing-on the weekends or when I’m feeding more than a 2 & 3 year old, or if I wasn’t whipping egg whites, the pancakes weren’t as light and fluffy as I wanted. So after numerous tries, and some tin can tasting pancakes, I got here! A quick and easy recipe.
All you need is 5 minutes and one bowl. oh and a few ingredients, but nothing out of the ordinary. And then you have delicious, super fluffy pancakes! Add anything you’d like to it, my kids tend to request either blueberries or chocolate chips, sometimes both! (that’s yum!)
Next time you or your kids, (or your husband!), ask for pancakes and your short on time, or feeling kind of lazy, I’ve gotcha covered!

Ingredients
- 1/4 cup canola oil
- 2 eggs
- 1 teaspoon vanilla
- 1 cup milk (I used 2%)
- 1 1/2 cups all purpose flour
- 2 TB sugar
- 1/2 TB baking powder
- 1/4 teaspoon salt
- cooking spray
Directions
- Heat your griddle to 350° and spray with cooking spray
- In a large bowl, whisk together the oil, eggs, vanilla, and milk until well mixed
- Fold in the flour, sugar, baking powder, and salt. It will be slightly clumpy at first, you don't want to over mix, but its okay to flatten out some of the clumps with a rubber spatula.
- Using a 1/4 cup dry measuring cup, pour the batter onto the heated griddle. ( allow to cook and begin to rise for a minute before you sprinkle on any chocolate chips or fruit here)
- Cook until they begin to bubble, then flip and cook 1-2 minutes more. Drizzle with syrup and enjoy!
