- Sweet Potato & Turkey Chili—made originally with ground sirloin, I use ground turkey constantly in place of it, for the beans, use what you have on hand, I love kidney or white beans, and the kids adore this! Tip: If you want some heat for yourself, just sprinkle some crushed red pepper flakes right in your own bowl!
- Butternut Squash Lasagna—this is always a hit! I tend to sub in turkey sausage for the ground chicken for a little added flavor, but its seriously delish! If you’re not a fan of butternut, this mexican lasagna is always very well received too!
- Spaghetti & Meatballs—my 3 year olds favorite, he requests it every week! I make a quick sauce and throw in those meatballs still frozen, cook for about 30 minutes and serve!
- Slow Cooker Butter Chicken—plllllease don’t skip the naan with this one! We make this constantly and the fresh naan just takes it over the top!
- Chicken Tortilla Soup—my kids always go back for seconds every single time I make this one! Tip: make a double batch, freeze half of it, and you’ll have a dinner ready to go in a pinch!
- Sweet Potato Foil Packet Tacos—so fast, easy, & really good!
- BBQ Chicken & Pineapple Lettuce Wraps — to make these kid friendly, I serve them to the kids deconstructed, with a side of fruit, and a veggie, usually sliced cucumbers or baby carrots to keep it easy!
- Crockpot Beef Ragu—so much flavor, and it makes a lot so you can get a few different dinners out of this! Tip: we love to use spaghetti squash or zucchini noodles in place of the polenta for a healthier option. If you’re going all in though and aren’t a fan of polenta, this is excellent with cheesy grits!
- Slow Cooker Hawaiian Pork Burrito Bowl—I love how easy this is and it has so much flavor! The kids can’t get enough of it, especially with all the pineapple! Tip: I get super lazy sometimes, or I’m short on time and just use a store bough jar of enchilada sauce!
- Turkey Bolognese—I use ground turkey in place of ground beef in almost everything, and it’s so good, and so much better for you! We love this bolognese, I love that the kids are getting an extra dose of veggies, and they love any kind of pasta and “red sauce”! Tip: My husband and I will usually eat this over roasted and shredded spaghetti squash or zucchini noodles.
