I started a new series this weekend called, Happy Hour. I figure these days with my little ones, I don’t get out much but when I do its usually to meet a friend or go with my hubs to happy hour. Its early enough that we can get home and get the kiddos in bed still. Its a fun little date! It’s where we catch up, talk gossip with my girlfriends, or just get some US time. Its a great couple hour breather from being around dirty diapers and spit up. It rejuvenates me and I feel like I’m a better mom when I get away for a couple hours.

So when I was thinking of a name for my random thoughts to be shared, I figured Happy Hour was perfect. Its the best chance I get to catch up with the rest of the world, so Id like to invite you all to happy hour, hopefully weekly, but as often as possible for sure! Okay, so on to these crazy good waffles! Not only are they healthy, whole wheat waffles, but there is a berry puree cooked into the waffles and a homemade berry syrup drizzled over a stack! HECK YES! Clocking it at only 165 calories for a large waffle including the syrup, you can indulge a little! 🙂 These waffles are wonderfully fluffy, light and are a perfect hidden healthy breakfast! I froze the leftovers and fed my son with them for breakfast for a week by popping them in the toaster or microwave! He devoured them right up always asking for more!

The berry syrup is the icing on the cake aka the syrup on the waffle stack! Hardy har har har…Im tired. Seriously though, its necessary, and you must make it! It takes two minutes, then you leave it to juice itself! That is not meant to sound dirty…maybe I’m the only one that took it that way? Ok, I’m going to stop now, but you should really try these! Whole Wheat Berry Waffles with Strawberry Blueberry Syrup

Prep Time: 20 minutes

Cook Time: 5 minutes

Total Time: 25 minutes

Yield: 10 Large Waffles

Serving Size: 1 large round waffle

Calories per serving: 165

Fat per serving: 4 grams

Whole Wheat Berry Waffles with Strawberry Blueberry Syrup

Wonderful whole wheat waffles infused with a berry puree and topped with a delicious strawberry-blueberry syrup!


  • 1 2/3 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs, yolk and white divided
  • 1 1/2 cups skim milk
  • 2 Tablespoons vegetable oil
  • 1 teaspoon vanilla
  • Pinch of cream of tartar
  • 3 Tablespoons sugar
  • Cooking Spray
  • Fruit Puree
  • 1/2 cup fresh blueberries
  • 7-9 whole fresh strawberries
  • 3-4 Tablespoons water
  • For the Strawberry-Blueberry Syrup
  • 1/2 cup fresh blueberries
  • 1 cup chopped strawberries
  • 1 Tablespoon sugar


    For the Syrup
  1. In a small pot. over low heat, toss the blueberries, strawberries and sugar together.
  2. Cover with a tight fitting lid and allow it to sit for 10-15 minutes, stirring occasionally, until the fruits have released their juices.
  3. Keep on low heat, until ready to use.
  4. For the Waffles
  5. In a large bowl sift or whisk together the flour, baking powder, baking soda, and salt. Set aside.
  6. In a medium sized bowl, whisk together the egg yolks, milk, vegetable oil, and vanilla.
  7. Pour the wet ingredients into the dry and mix until just incorporated.
  8. Make the fruit puree in the blender by adding in the blueberries, strawberries, and water, pulsing until smooth. (You don't want this watery)
  9. Fold it into the waffle batter
  10. In a small bowl, whisk together the egg whites and cream of tartar until stiff peeks form. Sprinkle in the sugar and continue whisking until the stiff peeks are glossy looking. (An electric whisk works best for this!)
  11. Carefully fold into the waffle batter until just mixed.
  12. Heat up your waffles iron and cook according to instructions. Top with homemade syrup!

    I’m so intrigued by the berry puree cooked right into the waffles, it sounds amazing!! My MIL actually just bought me a new waffle iron for my birthday last month and since I’m trying to eat healthier I haven’t made anything yet. Think these might be first up 🙂

      They’re so good! They’re not super sweet because there really isn’t any sugar in them, but the berry syrup more than makes up for that!
