It hit an unbelievable high here this week for April. Yes, you’re seeing that right…82 freakin’ degrees.In Maine. I couldn’t believe it myself, but loved every second of it! (Sadly this weekend will be sloppy 🙁 )After we went for our run we drove straight to my parents house and jumped in the pool..my son LOVED IT! He wanted to be let go so he could swim on his own so badly! hah! I can’t wait for summer with this little guy! 😉

                   

 You know hot weather calls for Iced cold cocktails! And I sure have been drinking my fair share of Margaritas and was in the mood for a little switch-up! I looove Pina Coladas…problem is, they are HUGE calorie bomb! Most places I checked, this fabulous drink clocks in right around 650 calories a drink! That’s almost half your daily caloric intake! Its redic! But I created something quite lighter…

A Skinny Pina Colada!! It still contains all the fabulousness of a calorie bomb, but SO much better! It’s not super sweet, has the amazing smell and taste of coconut..its creamy, silky, and goes down nice 🙂 At only 236 calories for a 16 ounce glass…you are golden!! Prep Time: 5 minutes

Yield: 8-16 ounce glasses

Calories per serving: 236 cals/16 oz

Skinny Pina Coladas

Ingredients

  • 21 ounces light coconut milk
  • 8 cups frozen pineapple chunks
  • 18 ounces silver rum

Directions

  1. Add all ingredients to a blender and blend until smooth and creamy
  2. Garnish with fresh pineapple and serve!
