Roasted Garlic & Rosemary Artisan Bread | Fabtastic Eats I finished 90% of my Christmas shopping this past weekend. Do you have any idea what an accomplishment that is for me? Considering last year, I did it all 2-3 days before Christmas. I’ve been a procrastinator pretty much my entire life..any time papers or projects were due in school, I was always the girl that waited until the night before & would end up pulling an all-nighter. I usually wait until the last minute to do pretty much everything, I don’t even know why. Because then I’m scrambling and it can get stressful.

I know, all you type a’s are cringing at the procrastination and intentionally putting myself in a stressful situation, I can’t help it, I like to live on the edge 😉

That takes a small amount of planning ahead of time, not much, but enough that you can’t do what I did yesterday, and start frantically searching around for a quick bread recipe for dinner. This bread is mouthwatering…crusty on the outside, soft and airy on the inside, loaded with buttery roasted garlic and fresh rosemary. It rises for a good amount of time, then cooks in your dutch oven, and what results is golden brown perfection.

You can eat this with whatever you desire, I like to sit on my kitchen floor with it loaded in butter too, but the recipe coming tomorrow is what I served it up with, this particular time! 😉 Enjoy!

Roasted Garlic & Rosemary Artisan Bread

Prep Time: 10 minutes

Cook Time: 40 minutes

Total Time: 9 hours

Yield: 1 loaf crusty bread

Crusty, no-knead, artisan bread, flavored with fresh rosemary and buttery, roasted garlic!

Ingredients

  • 1 head of garlic
  • 1 TB olive oil
  • 2 cups all purpose flour
  • 1 cup bread flour
  • 1 teaspoon salt
  • 1/2 teaspoon active dry yeast
  • 1 1/2 cups warm water
  • 1 sprig fresh rosemary, minced (1-2TB)

Directions

  1. Preheat oven to 400°. Slice the top off the garlic to expose the cloves, drizzle with olive oil, and wrap in tinfoil. Roast for 30-40 minutes until golden brown.
  2. Squeeze out the garlic into a small bowl or plate, and using a fork, mash well until smooth and creamy.
  3. In a large bowl, stir together the flours, salt, yeast, and rosemary. Using a wooden spoon, stir in the mashed garlic and water until it comes together. The dough will be shaggy, that's okay.
  4. Cover and let rise for 8-24 hours. (Mine rose for around 14)
  5. Preheat a dutch oven in the oven at 450°
  6. Flour a surface, roll the dough out onto it, and shape into a round disk.
  7. Place in the heated dutch oven, cover with the lid and bake for 30 minutes. Remove the lid, and cook for an additional 8-15 minutes, until golden brown.
