Do you like to read? Or get a chance to often? My husband bought me an iPad last weekend as a nice little surprise, and it’s been fantastic. There are so many books I’ve been wanting to catch up on but I hate waiting for them to become available at the library or wait for amazon to deliver them.

Yes, even with Amazon Prime and its two day shipping. I am one impatient woman.

Needless to say, the first app I downloaded was the kindle. And I’ve plowed through three books since last Sunday. I mentioned last week that I’m obsessing over the This Man Trilogy..and I still am. Kind of.

I loved, loved, loved the Fifty Shades Trilogy but just as I’m about to finish the last book in this series, I feel so disappointed. I mean, I get the whole alpha male thing, but umm, this particular one, just totally disgusts me. Where some woman swoon over it, I find it extremely degrading.

These are books I would never let my daughter read, (if I had one!), because it is NOT REAL LIFE. And it isn’t anything close to what I would want her to aspire to. However, they must be somewhat good if I can’t put them down.

Admittedly though, I love reading this smut. (I just downloaded another trilogy similar to 50 Shades.) The problem is, I don’t get a darn thing done. I read and read for days, my husband comes home at night, and he’s lucky I’ve pulled away long enough to make dinner. I love to read, I always have, but when I really get into a book, it sucks me in to it’s complete entirety until it’s finished. It’s terribly wonderful.

There is not a whole lot to say about these burgers, because I think the impossibly long title speaks for itself. (I just couldn’t leave anything out!) They’re packed with protein, incredibly healthy, and so perfectly flavorful.

The spicy cheddar on top adds a little kick, and the creamy, avocado crema adds a nice cool tone. We ate these on burger buns, and we ate the leftovers the next day on top of a salad. They reheat wonderfully. These vegetarian burgers are an excellent 30 minute weeknight meal, or an easy meal prep if you do that on Sundays.

Quinoa, Black Bean, and Sweet Potato Burger with Avocado Crema and Buffalo Cheddar

Prep Time: 20 minutes

Cook Time: 10 minutes

Total Time: 30 minutes

Yield: 6 Burgers

Protein Packed Vegetarian Burgers, loaded with Sweet Potato, Black Beans, and Quinoa, make an incredibly flavorful and healthy meal!

Ingredients

  • 1/4 cup dry quinoa
  • 1/2 cup water
  • 1 1/2 cup cooked sweet potato (a large sized one)
  • 15 ounce can of black beans, rinsed
  • 4 ounces green chilis
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne
  • salt and pepper
  • 1 cup panko
  • 1/4-/2 cup cilantro (depending on your taste preference)
  • 4 ounces chipotle white cheddar cheese, sliced
  • 6 burger buns
  • 1 batch Avocado Sauce
  • Cooking Spray
  • Optional Toppings: lettuce, tomato, red onion

Directions

  1. Add your quinoa and water to a small pan, bring to a boil, cover and reduce heat to low. Cook for 10-15 minutes until all the water has been absorbed.
  2. In a food processor, add the sweet potato, black beans, cooked quinoa, green chilis, cumin, chili powder, onion powder, garlic powder, paprika, cayenne, and cilantro. Pulse a few times until well combined.
  3. Transfer to a medium sized bowl, and fold in the panko.
  4. Form into six patties, packing them tightly. Spray a grill pan or skillet with cooking spray and heat over medium-high heat.
  5. Add the patties and cook for about 4 minutes on one side, before carefully flipping them. Add the cheese, and let it melt on while the other side is toasting.
  6. Toast the burger buns in the toaster if you like them toasted.
  7. Place burger patty on the bun, top with avocado crema and any toppings that you desire. Enjoy!
