It is a darn heat wave up in these parts! From 50 and rainy to 85 sunny, humid, and HOT within 24 hours…welcome to New England! I took my boys for a run yesterday around 10am..not really thinking about it. HUGE mistake. About halfway through, I would have paid BIG money to have someone come pick us up! I was so sticky, had no water, and still two miles from home..wahh. From this point on, if I want to get in a workout, I’m going to need all the motivation I can muster to get up early enough to go before the heat sets in. Thank goodness we live on the ocean and my parents have a pool. #lifesaver

Peanut Butter S'mores Cookies

This weekend we’re having a birthday party for my son! I cant wait..whenever I have a party though, I always want to make about 25 different kinds of cookies. I’m not sure why but it sounds like an awesome idea. However, since my wedding is three weeks away, and I have zero self control around sweets, I’m limiting myself to 1-2 types of cookies, and a cake. I feel so lame. C’est la vie. (I totally just started singing this song..does anyone else remember it? I was in sixth grade!! hahah) good times.

I’m making these cookies this weekend. Oh they’re soo flippin’ good. They taste just like s’mores! I mean, why wouldn’t they? They’re loaded with chocolate, marshmallows, and graham crackers. And PEANUT BUTTER! I know some of you love the classic s’more, but I refuse to eat mine without peanut or cookie butter. Picky? maybe. But I know what I like! And its peanut butter on my darn s’mores! Woah I just got a little over excited.

So there’s peanut butter in here. Clearly. They’re Peanut Butter S’mores Cookies. But if you don’t like peanut butter (gasp!) or your allergic, (acceptable) then eliminate it! Or replace it with cookie butter, because seriously, that’s what I’m thinking of doing for my sons birthday this weekend. You made it to Friday, you deserve a cookie. Especially a s’mores cookie!

Cook Time: 10 minutes

Total Time: 20 minutes

Yield: 18-22 Cookies

Peanut Butter Sโ€™mores Cookies

Graham crackers, marshmallows, chocolate, and peanut butter, rolled up into S'mores Cookies!

Ingredients

  • 1 1/2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla
  • 1 egg
  • 1 cup peanut butter
  • 3/4 cup chocolate, chips or chopped (about 3 bars)
  • 3/4 cup mini marshmallows
  • 1 cup crushed graham crackers (About 6 whole crackers)

Directions

  1. Preheat oven to 350 degrees. Line baking sheets with parchment paper.
  2. In a large bowl, whisk together the flour, baking soda, and salt.
  3. In the bowl of a stand mixer fitted with the paddle attachment, cream together the butter and sugars for 2-3 minutes.
  4. Add in the egg and vanilla.
  5. Mix in the peanut butter.
  6. Fold the dry ingredients into the wet ingredients and mix until just incorporated.
  7. Stir in the chocolate pieces, marshmallows, and graham cracker pieces. (For the crushed grahams, its easiest to just put them in a zip-lock and roll over them with a rolling pin.)
  8. Spoon dough into 1-2 inch balls and slightly flatten on the baking sheets.
  9. Bake for 8-10 minutes. Cool for 2 minutes before transferring to a cooling rack. Enjoy!

    Love the PB and s’mores combo! Really brilliant. And you have more will power than me – I ate so good in prep for my wedding, and then got so stressed the weeks before, there wasn’t a chocolate in site that was safe! ๐Ÿ™‚

    The past few days have been brutally hot, but I won’t complain because I was so ready for winter to end and this weather to finally arrive. But yeah, not ideal for exercising outside ๐Ÿ™‚ Anyway, I absolutely adore these cookies – s’mores season is here!

      Oh I was loving the brutally hot days! (As long as I had a pool! :P) haha I burnt like a lobster on Saturday though! Oops! I am so excited for s’mores season tooo! Think of ALL the variations!!
