Do you know what today is? Of course you do, it’s Halloween. But do you know what else it is? Our 5 year anniversary. Dating anniversary, which totally counts so much more because it’s longer. And because that’s when it all began..so that’s what we’re celebrating, always. 5 years. To some of you who have been married for wayyyy longer than that (congratulations, you’re my heroes! 😉 )..I’m sure 5 years is nothing to you, but to me, I’m only 25..I was 20 when we met..I couldn’t even legally drink yet. A lot has happened in 5 years..we’ve moved to Maryland and back in 6 months, moved locally a few times, we had two kids, got married, moved to Missouri, we’re moving to Washington in a couple months, went through school..etc etc. What I’m saying…5 years is a long time.

If you had asked me 5 years ago what I would be doing today, this definitely wouldn’t have been it. I didn’t even know blogs existed at the time, I was still going through the “I don’t ever want kids” phase, I was young and going out and partying was all I cared about…my, my how quickly things change. Marriage and kids were the last things on my mind.

And here we are 5 years later, and I have the two little greatest joys ever brought to my life asking for chocolate milk and hysterically laughing over Shrek..I have a husband who not only doesn’t blink an eye over my shopping habits, but provides for them ;), and comes home after long days and cleans, helps make dinner, takes care of the kids, and gives me a break. I’m pretty darn lucky.

So yah, Happy Halloween and Happy 5 years babe, I love you and am so grateful for you every single day, even when I act otherwise! 😉 I don’t know what I’d do without you.

Oh, Oh, do you know what ELSE today is? It’s National Caramel Apple Day! There are so many fun food holidays and I hardly ever keep up with them, but I had to acknowledge one of my most favorite sweets! It’s basically healthy because its a whole apple, meaning all the sugar totally cancels out, so eat up!

These little beauties aren’t necessarily caramel, but close enough. I love Dulce de leche, it’s so creamy and fantastical. White chocolate and macadamia is one of my favorite cookie combinations, so it only makes sense to combine them here too. Love everything about these, the best part, buy a fabulous jar of Dulce de leche, and these babies take 15 minutes, start to finish. Perfect Halloween treat, do itttt!

Dulce de Leche dipped Apples with White Chocolate and Macademia Nuts

Prep Time: 10 minutes

Total Time: 15 minutes

Yield: 4 Dipped Apples

Dulce de Leche dipped Apples with White Chocolate and Macademia Nuts

Crispy apples, swirled in creamy Dulce de leche, and rolled in sweet white chocolate and salty macadamia nuts..these little snacks are a perfectly fun and tasty treat!

Ingredients

  • 4 apples
  • 4 sticks of choice, stuck into the top center of the apples
  • 1 cup Dulce de leche
  • 1/2 cup white chocolate, chopped
  • 1/4 cup macadamia nuts, chopped

Directions

  1. Heat a small saucepan on low, and add the dulce de leche.
  2. Occasionally stir for 5-7 minutes over low heat, to turn it into a liquid suitable for dipping.
  3. Mix your chopped white chocolate and nuts together on a plate.
  4. Dunk your apples into the dulce de leche, swirling in it if necessary to fully cover.
  5. Roll in the chocolate and nuts mixture.
  6. Set on a plate. The Dulce de leche is thick enough that it shouldn't really be dripping off, but if it is, just set it in the fridge for 20-30 minutes to set.

Notes

This recipe is easily double or tripled, and so worth doing!
