It’s Friday, we’re halfway through November, Thanksgiving is less than two weeks away. I haven’t even begun to think about Christmas shopping. Well, that’s a lie, I’ve thought about it, but I haven’t even started to put together a list of what to get for who..and then actually going shopping for it.

In years past, I usually wait until after Thanksgiving, Christmas shopping has always been enjoyable for me, I consider it part of the holidays..just like sugar cookie making parties and Pierogi parties in our family, I really love Christmas shopping. I love the  decorations in the stores, especially the malls, I love the lights and the Christmas music, I love the general atmosphere, I love the red cup and a hot latte while doing it, I love buying gifts for everyone else. And most of the time, I don’t really mind the hussle and bussle either, though I do wish more people would slow down and appreciate whats around them..since it only lasts a month..this year, less.

Nonetheless, The time between Thanksgiving and New Years is my most favorite, favorite, FAVORITE time of year. I get giddy with excitement just thinking about it. Living in a hotel through the holidays this year is going to kill me, I’m already so sad thinking about it, BUT I’m going back to Maine for a week in December, and I know my moms house will be full of Christmas cheer..the movies, the music, the cookies, the cocktails..I could not be more excited just thinking about it!

Well I guess all this Christmas talk and Tacos don’t exactly mix, but so what? You still need to eat food during the holidays, its not all about the sweets. (Is It?) Plus you will love these tacos! Why? Because I said so! No, because they are full of texture, the red cabbage and the sliced apples add loads of crunch, and they’re tossed in an apple cider vinaigrette. Flavaa flaaav. (I miss the old MTV…the real MTV) The steak soaks in an apple cider marinade..clearly we’re all about the apple cider here, and its fantastic!

Cook the steak, assemble the tacos, and add whatever toppings you so desire. I threw on some gorgonzola because I love it and am going through a huge gorgonzola craze currently, but I definitely think Cotija would be a perfect option and is nowhere near as strong as gorgonzola, but equally as tasty..it’s actually one of my favorite cheeses for tacos! So, since you need a little real food in your life this time of year, definitely add these tacos to your dinner menu!

Cider Flank Steak Tacos with Red Cabbage Apple Slaw

Yield: 6-8 Tacos

Cider Flank Steak Tacos with Red Cabbage Apple Slaw

Ingredients

    For the Slaw
  • 1/4 cup rice vinegar
  • 2 Tablespoons brown sugar
  • 1 Tablespoon white balsamic vinegar
  • 1 teaspoon olive oil
  • dash of salt and pepper
  • 2 cups sliced red cabbage
  • 1 apple, thinly sliced
  • For the Cider Marinade
  • 1 cup apple cider
  • 1 Tablespoon red wine vinegar
  • 1/2 teaspoon dijon mustard
  • 1/2 teaspoon thyme
  • 1 Tablespoon olive oil
  • 1/2 Tablespoon brown sugar
  • salt and pepper
  • 1 1/2 pounds sliced flank steak
  • 6-8 6" Flour Tortillas
  • 1/4 cup gorgonzola (optional) OR Cotija if you're not a fan or the Gorgonzola
  • Small handful cilantro, roughly chopped (optional)

Directions

  1. To make the slaw, whisk together in a large bowl the vinegars, brown sugar, olive oil, and a dash of salt and pepper.
  2. Add in the sliced red cabbage and apple slices and toss to coat. Set aside for 30-40 minutes while you marinate the steak. (Stir a few times so all the juices don't just settle on the bottom. You want a good coat of them on the slaw.)
  3. To make the cider marinade, whisk together the apple cider, vinegar, dijon, thyme, oil, brown sugar, and a dash each of salt and pepper.
  4. Add the sliced flank steak, toss to fully coat. Marinate for 30 minutes on the counter. Toss occasionally so all the steaks get an even coat of the marinade.
  5. When ready, heat a skillet over high heat. Using Tongs, add the flank steak, being sure not to over crowd them in the pan. (Do them in two batches if necessary.)
  6. If they're sliced thin, which is how they usually come, you'll only need to cook them 2-3 minutes on each side before they're ready.
  7. Once ready to assemble, heat your tortillas in the microwave, wrapped with a paper towel, if you like them warm.
  8. Add 2 slices of the steak to each tortilla followed by a good helping of the slaw. Sprinkle with fresh cilantro and a small amount of gorgonzola. (If you don't like gorgonzola, Cotija is a great alternative!)
