I’d be lying if I said I wasn’t THRILLED that it’s Friday! Even though my husband had Monday off, it’s been a long week, and I’m happy the weekend is within my grasp. You know those days where you feel like you haven’t stopped, and you look around at the end of it all, and can’t even tell what the heck you’ve accomplished? Yah..that was my entire week. C’est La Vie.
It’s officially Spring, and I am so thrilled for the warmer weather and cuter clothes! (Not so much for bikini season.) 😉 But this salad should help! I never used to be a huge salad eater, but they’ve grown on me immensely. As long as they’re filled to the max with toppings, you know, so the lettuce is more of a crunchy addition! 😉
My husband likes to make little side salads with dinner all the time, but unless he has the time, they usually just consist of lettuce and cucumber, and a drizzle of dressing..umm, just no. To boring for me, I like my salad to have some pizazz!
