There is a local restaurant we used to go to, and sometimes still do when we don’t have the boys, but everything on there menu is crazy good! Most of the time when I go out to eat, I get the same thing at each place..when I know what I love at a particular restaurant I get nervous to change it up..I know, big problems, huh? But at this restaurant, every time we go, I try something new, and everything is amazing, every.single.time. I find that very rare in a place!

Last time we went, I saw they have these fruit quesadillas made with pears, when I saw it on the menu, I thought what a great snack, then moved on and ordered a steak salad. But for weeks after I left, I couldn’t stop thinking about that fruit quesadilla. Because I didn’t order it, I had no idea how they made it, but I wanted it anyway! I was home all day with the kiddos and had to totally improvise, and what I came up with is in.cred.i.ble. Seriously, I don’t know what theirs taste like, and I hope to go try it soon, but I don’t even know if I need too!

A few weeks back I had posted a picture on instagram, claiming it was the best lunch I had had in awhile, and still that is no lie. It’s so simple, but the combination of flavors together is so perfect. The caramelized and sweetened nectarines mixed with the salty feta, creamy mozzarella, and tangy balsamic glaze, all encompassed by a crunchy tortilla shell..I want one just thinking about it again! These quesadillas are amazing.

You could make a few, sliced them up, and serve them as appetizers, or do as I did, and devour the entire thing in a ten minute period. I recommend both ideas. Either way, you should really try this…its one of my favorite quick snacks!

Prep Time: 5 minutes

Cook Time: 15 minutes

Total Time: 20 minutes

Yield: 1 Large Quesadilla

Caramelized Nectarine and Feta Quesadlla with a Balsamic Glaze

A wonderful combination of sweet and tangy from the caramelized nectarines and feta..the balsamic glaze brings the whole quesadilla together!

Ingredients

  • 1 Tablespoon coconut oil
  • 1 almost ripe Nectarine, sliced thin
  • 1/4 cup sliced yellow onion
  • 1 Tablespoon brown sugar
  • 2 whole wheat tortillas
  • 1/2 cup part skim mozzarella
  • 1/3 cup freshly crumbled reduced fat Feta
  • balsamic glaze for drizzling

Directions

  1. In a medium sized skillet over medium heat, melt the coconut oil and toss in the sliced nectarine.
  2. Toss for 2-3 minutes then add in the onions
  3. Cook until the onions are almost translucent, 4-5 minutes.
  4. Sprinkle in the brown sugar and toss to fully coat, reduce heat to medium-low and allow to cook until the nectarines are soft and caramelized.
  5. In a second skillet, over medium heat place in a tortilla and cook until golden brown, flip and sprinkle the whole thing with 3/4 of the mozzarella cheese and all of the Feta.
  6. Place the caramelized nectarine mix on top of the cheese
  7. Sprinkle the remaining mozzarella on top and top with the second tortilla. Once the cheese is mostly melted, flip and cook for 1-2 minutes until gold brown.
  8. Remove to a plate and drizzle with balsamic glaze. Enjoy!

Notes

You can easily make 2, 3, or 4! Just slice up more nectarines and have more cheese ready! Super simple, and crazy good!
