The biggest adjustment to living in the PNW, is honestly, the traffic. (And the weather, but I already knew about that one.) Everyone warned me about the traffic here in Washington, but seriously, it’s a beast of it’s own. You can google map directions to get somewhere, (which by the way, after two weeks I’m already getting around without my GPS. Even though it’s mostly to Target, the grocery store, and TJ Maxx, I still call that a win), and it will give you the mileage, and the minutes. WELL, it’s all a big fat LIE. Not the mileage, that’s usually right, but the minutes, oh no, it doesn’t take 9.2 miles and 15 minutes to get to the mall, it takes 9.2 miles and 35 minutes. You think I’m dramatic. I’m not.

For someone as impatient as myself, this is an adjustment FOR SURE. It’s not really teaching me to slow down either, if anything my driving has gotten even more aggressive. My husband hates driving with me. He’ll get over it.

The weather is SO weird here, (I  know most of you don’t really care about it) but it’s just so bizarre I can’t get over it. This is what a typical day here looks like so far: 30 minutes of down-pouring rain, (like can’t see 10 feet in front of you), at any random time during the day, then in front of you it’s sunny with blue skies, and to the the right of you is grey/black skies, and misting rain…that probably doesn’t sound all that crazy to you guys, but all this happens at about 50 degrees, and there is never any snow. It’s TOTALLY different than New England.

I’m trying to adjust, but all I really want to do is buy a pair of Hunter’s, (my shoes are all getting soaked!), but someone told me that you stick out like a sore thumb, apparently locals don’t wear rain boots. Lame. I’m on the verge of looking like a permanent tourist, because I can’t handle anymore cold feet.

Let’s talk about something a little more warm and comforting. GRILLED CHEESE! This is so similar to these turkey burgers with garlicky kale and caramelized onions, like almost identical. I loved the toppings on that burger SO much, that I made it again, and stuffed it inside a grilled cheese with ooey, gooey, melty butter cheese. YES, butter cheese.

Make these. I kind of want it for breakfast now.

Prep Time: 5 minutes

Cook Time: 30 minutes

Total Time: 35 minutes

Yield: 3 Grilled Cheese Sandwiches

Caramelized Kale and Onion Grilled (Butter) Cheese

Garlicky Kale, Caramelized Onions, and Butterkase Cheese all come together to make one heck of a comforting and tasty Grilled Cheese!

Ingredients

  • 2 Tablespoons olive oil
  • 1/2 of a large red onion, sliced
  • 1 1/2 cups chopped fresh, washed kale
  • 1/4 teaspoon garlic powder
  • 1 Tablespoon white wine vinegar
  • salt and pepper
  • 6 Slices bread of choice
  • 4 ounces of Butterkase cheese
  • 1 Tablespoons butter

Directions

  1. Heat up 2 TB olive oil in a large skillet over medium-low heat. Add the sliced onion, and toss to coat.
  2. Saute for about 20 minutes, tossing occasionally, until the onion starts to caramelize.
  3. Add the chopped kale and garlic powder, toss together with the onion. Cover and allow to steam for about 3-4 minutes.
  4. Add the vinegar and toss. It will evaporate pretty quickly, but adds great flavor. Sprinkle in a crack or two of salt and pepper. Set Aside.
  5. Heat skillet up to medium heat, spread one each side of the bread slices with butter.
  6. Place in the skillet and cook each side until golden brown. Reduce heat to low.
  7. Divide the cheese evenly, and place on each slice of toasted bread. Top three of the slices with the onion and kale mix. Top with the three remaining cheesy breads. Cook until completely melted. Slice in half if desired, and serve.
