Caramel Apple Cookie Dough Bars | Fabtastic Eats When we were little, my mom used to make cookie dough, roll it into logs, and just keep it in the freezer to break off and snack on..so fun, right?! For a looooong time, I much preferred the dough over the actual cookie, I used to actually tell people, and believe it myself, that I didn’t like cookies. (Insert hands on head, monkey emoji.) I know.

Regardless of how much I love cookies, I can never, ever resist good ol’ lickin the spoon, scraping the bowl, plunging in a finger, cookie dough!

Caramel Apple Cookie Dough Bars | Fabtastic Eats

Caramel Apple Cookie Dough Bars

Prep Time: 10 minutes

Total Time: 40 minutes

Yield: Makes 6-8 bars

Spiced Cookie Dough is loaded with Cinnamon & fresh Apples, chilled and topped with ice cream and smothered in caramel!

Ingredients

  • 1/2 cup butter, softened
  • 1/4 cup brown sugar
  • 1/2 cup white sugar
  • 1 teaspoon vanilla
  • 2 Tablespoons milk
  • 1 teaspoon apple pie spice
  • 1/2 teaspoon cinnamon
  • 1 cup all purpose flour
  • 1/4 teaspoon salt
  • 1 apple, diced small
  • 1/3 cup cinnamon chips (optional, but amazing!)
  • Caramel for drizzling (lots!)
  • Ice Cream (optional, but amazing!)

Directions

  1. In a large mixing bowl, using a rubber spatula or wooden spoon, mix together the butter, sugars, vanilla, and milk, until smooth and creamy.
  2. Add the apple pie spice, cinnamon, flour, and salt, stir to combine.
  3. Fold in the diced apples and cinnamon chips.
  4. Line an 8x8 baking dish with parchment paper, and pour the dough into it. Flatten and press down evenly.
  5. Pop in the freezer for 30 minutes, or the fridge for 2 hours, before slicing and serving.
  6. Top with ice cream, (I used my fav apple crisp but vanilla would be perfect too! And drizzle the heck out of it with caramel! (Salted caramel is fantastic!) Enjoy!

Store covered in the fridge.
