Blueberry and Nectarine Salad with Avocado Citrus Vinaigrette

As you may have noticed, my posts have been somewhat sporadic as of late! My apologies. I’m getting married in 9 days! Oh I never thought the countdown would hit single digits! But it did, its here, and its quickly approaching! The closer we get the more my to-do list should be dwindling down, but it seems like its just the opposite, every day I’m adding more and more things to do! But we’re getting there, one mini-disaster after another! 😉 Actually in all honestly, its been pretty smooth sailing, it just seems like a lot more work with two kiddos! Not to say there isn’t a ton to do, it just takes a wee bit longer!

I am so excited though and cannot wait! My bachelorette party is this weekend, and we actually decided to do dinner and drinks with the bachelors, as well. This may sound lame to some, but seriously, we already have two kids, and we already live together, so we talked about it, and didn’t really want to do it separately! It’ll be much more fun this way for us, so we can’t wait! (There will be gambling and slots in the mix as well as a pedicure or facials!) Hand me my tiara! 😉

All this wedding planning has left me zero time to cook lately. (Which is why Blue Apron was such a savior!) But salads are so quick to throw together and completely easy! Plus, I personally think that it’s pretty hard to make a salad taste bad! You can add basically anything you want to a salad! This time I chose to add blueberries, nectarines, avocado, blue cheese…not a blue cheese fan? I bet feta would go spectacularly well in here too, and its much milder. I mixed up a citrus vinaigrette, with some avocado oil, and it was superb! Toss in some chicken if you so desire and you’ve got yourself a full on meal!

Blueberry and Nectarine Salad with Avocado Citrus Vinaigrette

Prep Time: 10 minutes

Total Time: 15 minutes

Yield: 4 Medium size salads

Blueberry and Nectarine Salad with Avocado Citrus Vinaigrette

Colorful and Sweet fruits atop a bed of fresh romaine, and drizzled with an Avocado Citrus Vinaigrette, create an absolutely refreshing and perfect Summertime Salad!

Ingredients

  • 2 Hearts of Romaine, washed, dried, and chopped
  • 2 cups fresh spinach
  • 1 cup blueberries
  • 2 nectarines, chopped
  • 1 avocado, pitted and chopped
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, sliced
  • 1/4 cup blue cheese, crumbled
  • For the Avocado Citrus Vinaigrette
  • 1/3 cup lime juice
  • 3 Tablespoons fresh orange juice
  • 2 teaspoons honey
  • 3 tablespoons avocado oil
  • 1/4 cup balsamic vinegar
  • salt and pepper to taste

Directions

  1. In a large bowl, combine the chopped romaine and fresh spinach, and toss.
  2. Top with the blueberries, nectarines, avocado, cherry tomatoes, red onion, and freshly crumbled blue cheese.
  3. To make the Vinaigrette; whisk together the lime juice, orange juice, honey, avocado oil, and balsamic vinegar. Sprinkle in salt and pepper to taste.

    I’m not really familiar with avocado oil – does it have a strong flavor in this dressing or could a different oil be substituted well?

      It does have somewhat of a stronger flavor, but I think that it would taste equally as great with just regular olive oil as well!

    Something not right with the dressing. Way to much lime juice and vinager, not enough oil.

      With this dressing, the avocado oil is pretty overpowering, it doesn’t need as much as a normal light olive oil based dressing would need.

    Thanks for a great and simple recipe. I’ve made this twice now with a few changes for what I had on hand (olive oil for avocado oil) and lemon for lime juice. Awesome flavor combination I sprinkled in a little bacon for the meat eater guy serving.
