Hi! It’s Monday already..seriously, where did the weekend go? I didn’t realize it was Sunday night until about 10 o’clock last night. Oops! I hope you all had a very, very Happy Easter or Passover! We had a busy, fun-filled weekend, full of delicious food, sweets, a little baking, and lots of cooking! We spent Easter at my moms house and it was fabulous! We never go wrong there…I swear I get any cooking chops I have from her..she’s wonderful! I did make these incredible stuffed mushrooms though..ohmahgah..I can’t wait to share them with you guys..they were gone 10 minutes after they came out of the oven. Seriously..the best..I got lots of compliments and recipe requests..coming soon!

Banana Waffles with Peanut Butter Maple Syrup

What I really want to talk about today though are these Banana Waffles. With Peanut Butter Maple Syrup. I know, I know..Banana and PB are a very popular combo, but honestly folks, these are probably the best waffles Ive ever had. Uh-huh, and I’m not even a huge banana fanatic. The peanut butter maple syrup, MAKES these babies. Some people already spread PB on their waffles, but guys, melt it together with maple syrup, THEN pour it on…ahh I can hear the birds chirping. (<– huh?)

There is no sugar in these, just a tad bit of honey, and hardly any butter at all. They’re made with with half whole wheat flour and ground flax-seed, oh and there is fruit in it. I mean, these are practically a health food. Like my other waffle and pancake recipes, I always make the whole bowl of batter and freeze them. I pop them in the toaster or microwave for my son and/I  to eat all week. These banana waffles are no exception! They freeze and reheat perfectly! These waffles are definitely my favorite to date!

Banana Waffles with Peanut Butter Maple Syrup

Prep Time: 10 minutes

Cook Time: 5 minutes

Total Time: 15 minutes

Yield: 6-8 large waffles

Ingredients

    For the Waffles
  • 1 cup all purpose flour
  • 3/4 cup whole wheat flour
  • 1/4 cup ground flax-seed
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 1/2 cups fat free milk
  • 1 Tablespoon honey
  • 1 Tablespoon butter, melted
  • 2 eggs
  • 1 teaspoon pure vanilla extract
  • 2 ripe bananas
  • cooking spray
  • For the Syrup
  • 1/4 cup pure maple syrup
  • 1 Tablespoon peanut butter

Directions

  1. In a large bowl whisk together the flours, flax-seed, baking powder, cinnamon, and salt. Set them Aside
  2. Turn on and heat up your waffle iron
  3. In a medium sized bowl whisk together the milk, honey, melted butter, eggs, and vanilla.
  4. Mash in the bananas and mix until well incorporated.
  5. Fold the wet ingredients into the fry until just mixed.
  6. Spray your waffle iron with cooking spray, add about 1/2 cup batter and cook according to manufacturers instructions.
  7. For the Syrup, combine the maple syrup and peanut butter in a small pot over low heat, and mix together for 3-4 minutes until well combined.
  8. Pour the warm syrup over the waffles, top with additional bananas if desired and Enjoy!
