We’re going to a military ball early next month and my parents are flying all the way down here with my brother to visit for a few days and watch my kiddos while we get the chance for a night out! I am so excited! Since we’ve gotten here in Missouri, my husbands schedule has changed significantly, as we knew it would. Hes up and out by 4am every day, and doesn’t get home until anywhere from 5-8pm every night. That has been a huge adjustment for me, finding ways to keep my kids busy and entertained for 12-14 hours a day, by myself. I’ve always had him around or lots of family and friends to see. Needless to say, a night out, especially one where we can get all fancy, is going to be absolutely glorious!

I know its everywhere right now..I feel like every year people start going crazy for it earlier and earlier in the season. I’m pretty sure I was seeing pumpkin recipes coming out at the end of August this year, which in my opinion is crazy early. Even September was crazy to me! Starting things to early, is always a sure-fire way to get sick of them quick, fast, and in a hurry! I cherish Summer fruits, then apples in September, and for me October is alllll about the Pumpkin!

These little desserts in a jar are fabulous! They’re perfectly sweetened, so, SO creamy, little crunches of biscoff cookies, topped with a dollop of whipped cream and an extra cookie for dipping!

I think it took me about 20 minutes start to finish, then the hard part…setting them in the fridge for a little while. I mean, you don’t haaaaave to do that, you could totally be impatient like other people I know, and start scooping away!. BUT I highly recommend it. It doesn’t make the cookies soggy or anything, but softens them just enough for the flavors to all meld together. Oooh these are good.

Who has time to sit down anyways when there’s desserts to be eaten!? That’s what I thought. oh oh also! If you’re in a HUGE rush and need a last minute snack to bring to a party or just throw out for a game or a get-together, this makes the perrrrfect Pumpkin Dip! Use the biscoff cookies as the dippers, it’s heavenly I tell you. We did that too, and it’s equally as spectacular! No-Bake Pumpkin Cheesecake Biscoff Cookie Parfait

Prep Time: 10 minutes

Total Time: 2 hours, 10 minutes

Yield: 10, 6-ounce parfaits

Easy and Fast No-Bake Pumpkin Cheesecake, layered with crushed Biscoff Cookies and topped with Whipped Cream! It's creamy, crunchy, Fall perfection!

Ingredients

  • 8 ounces cream cheese, softened
  • 1 1/2 cups pumpkin puree
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon cinnamon
  • 2/3 cup powdered sugar
  • 14 ounce can condensed milk
  • 2-9 ounce packages of Biscoff cookies
  • Whipped Cream for topping

Directions

  1. In the bowl of your stand mixer fitted with the paddle attachment, beat together the cream cheese and pumpkin puree until smooth.
  2. Mix in the pumpkin pie spice, cinnamon, and powdered sugar.
  3. Add the condensed milk and mix on low until fully incorporated.
  4. In a large zip lock bag (or your food processor) add all except 10 of the Biscoff cookies, and crush, crush, crush! I used a rolling pin over a zip-lock bag.
  5. To assemble, grab 10 of your favorite jars or glasses, mine were 6 ounce glasses. Begin layering starting with the cheesecake mixture, sprinkling with the crushed cookies, and repeat until you get close to the top.
  6. Set in the fridge for 2-3 hours.
  7. When ready to serve, Garnish with some whipped cream, and an extra Biscoff Cookie. Enjoy!

Notes

If you don't have enough time to assemble into parfaits, use the cheesecake mixture as a dip and the Biscoff cookies as the dippers! We did that with a small amount of leftovers and it was perfect!!
