Eating dinner as a family is important to us, it was one of the things we talked about when we found out we were pregnant with our first, and since the day he was born, we’ve always sat at the dinner table together. (I remember when he was in a little baby seat, set on the table in front of us!) And we continued to do so with each babe that came after him. So we sit down together at least six nights a week, so I am alwaaays cooking!
These are just a few of our favorite healthy dinners! We eat tacos almost weekly, (lettuce cups for me generally), I make lots of soups or chili’s because they’re great leftovers, and I’m constantly just roasting up a TON of veggies for easy sides or lunches.

we actually just had this one on tuesday night and it was so good we were licking the plate clean! I added chicken for protein and subbed quinoa for the rice, but I followed everything else and it was hella good!
I make this at least 2-3 times a month. The kids love the sauce, and I love that there are extra veggies, and we all all love the spaghetti squash and its a healthier option for pasta, plus I love the amount of leftovers it makes for easy lunches and dinners all week!

I’ve made this more times than I can count…as written with the naan (which is ahhhmazing by the way, but I generally leave it out if I’m trying to watch what I eat more closely), and sometimes I leave out the butter entirely and it hardly makes a difference, its just so good! Oh & I sub the white rice for brown. Great for serving to guests too!

I love this take on chili! There’s so much flavor, I love the texture from the farro, and its such a great weeknight meal, so quick & easy! If I’m being strict, I leave off the cheese and chips…I know, I’m boring 😉 but even without the toppings, its fabulous!

clean eating lettuce wraps
we have some version of lettuce wraps pretty much weekly, they’re a fav of mine! But if I haven’t really planned to much out for dinner, these are what I generally throw together. Perfect if you have leftover chicken, top with salsa and avocado and you’re good to go! The key is buying a gooood, good salsa!

another zoodles recipe, but they’re easy, healthy and so good! More often than not, I love a simple sauce on most things, (olive oil, garlic, & red pepper flakes is a fav combo-especially on spaghetti squash!) & the addition of the lemon juice on this is so fresh and tasty, I love it!

this is one of my favorite quick & easy dinners. I switch up the spices depending what I’m in the mood for but I love how fast I can throw this together and how healthy it is!
