I don’t see it to frequently, we’re all crazy over all the pumpkin loaded sweet treats, but when I do see it, or when I do it myself, I get so giddy! It’s a little different from the norm, and I love that.

I mean, isn’t that why so many of us love to cook in the first place, to experiment, try new things, trash things up, think outside the box, and reach outside of our comfort zone. It’s one of the reason I love cooking so much. And this blogging thing certainly helps.

It’s taught me so much about flavor combinations and I can tell you for a fact that I see something every single day, that I never would have thought to use together, but it works. And when I see some crazy combinations, it excites me to try something new.

Well, it is in the kitchen and at the dinner table as well. I can’t even explain to you the feeling of excitement and happiness that comes over me when Im trying something new to me, or experimenting with new flavors or combos in the kitchen, yes sometimes I’m weary, but when it turns out better than expected, it’s one of my favorite emotions. I can’t explain it, but I know that some of you know exactly what I’m talking about.

I knew that pumpkin and apple were great together, I’ve done it before and I see it daily, but they’re always in the sweeter sense, so I was certainly worried about how a savory combination might be. But it turns out, I had nothing to worry about, because IT WORKS!

The flavors seem kind of everywhere, but when you smell it coming out of your oven, and sink your teeth into that first bite, you’ll know what I’m talking about. It’s a touch sweet from the cooked pumpkin, but with a whole lot of heat too, and lot’s of spice! It’s an Autumn lasagna at it’s finest. You will love it!

Apple, Pumpkin, and Spicy Sausage Lasagna

Prep Time: 30 minutes

Cook Time: 1 hour, 20 minutes

Total Time: 2 hours

Yield: Serves 4-6

An autumn inspired lasagna loaded with real apples, cider, pumpkin and so much cheesy goodness! This sweet and spicy savory dish is one for the books!

Ingredients

  • 3 pound pumpkin
  • 2 Tablespoons olive oil, divided
  • 1 shallot, minced
  • 1-1 1/2 lbs spicy turkey sausage, casings removed and diced
  • 3 apples, peeled and diced (I used gala)
  • 2 garlic cloves, minced
  • 1/2 lb brussels sprouts, trimmed and sliced thin
  • 2 teaspoons cumin, divided
  • 1/2 teaspoon crushed red pepper
  • 1 1/2 cups apple cider
  • 1 cup milk (I used 2%)
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cayenne
  • salt and pepper
  • 10 ounces gruyere
  • 2 ounces parmesan
  • Fresh thyme removed from the sprigs
  • 8 ounces whole wheat lasagna noodles

Directions

  1. Preheat oven to 425° Quarter the pumpkin, scrape out the seeds.
  2. Slather with 1 TB olive oil and sprinkle with salt and pepper. Roast for 35-40 minutes, until fork tender.
  3. Scoop out the pumpkin flesh and add it to a blender with the apple cider, milk, 1 teaspoon cumin, nutmeg, cayenne, and salt and pepper to taste.
  4. In a large saute pan, heat olive oil over medium-high heat. Saute the shallot for two minutes. Add the diced sausage and cook through.
  5. Reduce heat to medium-low. Stir in the apples, garlic, brussels, 1 tsp cumin, and crushed red pepper. Toss until the apples are softened. Remove from heat.
  6. Preheat oven to 375°
  7. To assemble the lasagna, spread a small layer of sauce on the bottom of your baking dish, followed by a layer of noodles, more sauce, then the sausage and apple mixture, sprinkle on some cheese and fresh thyme. Repeat until everything is used up, should be about three layers.
  8. Pop in the oven and bake for 30-40 minutes. Remove and allow it to cool for 15-20 minutes. Enjoy!
