Wow! I feel as though its been forever since Ive posted anything! Bear with me please over the next few weeks while I get back into the swing of things! Posts will be sporadic for a little bit but hopefully I have a chance to post more often than not! Im so excited for Fall and apples, pumpkins, and all the goodies that entails, so there will for sure be some delicious Fall treats up on here! I can’t wait!

In the meantime, along with trying to get my cooking back on track, my fiance and I have been busting out home projects majorly! Im nesting big time this pregnancy! ๐Ÿ˜› This week we ordered all our fabric and foam to do a DIY coffee table makeover into an ottoman! I can’t even tell you in enough ways how excited I am for this! I have been wanting to do this FOREVER! We’ve ordered a few different fabrics, so once they get here we just need to decide what we like the best and get to work! Ill be sure to show it to you, because Im psyched!

Now! On to these scrumptious Cranberry Oatmeal Bars! I’m not sure whether to call them breakfast or dessert..I’ve been eating them as both! (My 14 month old can’t get enough either! ๐Ÿ˜‰ ) They are just perfectly sweet, low cal at only 78 cals per bar! That’s
pretty amazing, considering they taste like so much more! So feel free to indulge a little! ๐Ÿ˜‰

These little beauties will satisfy your sweet tooth, without packing on the calories! Don’t like cranberries? Switch it out! I bet any dried fruit would taste heavenly in these! I can’t wait to try either some dried peaches or dried pineapple! These Cranberry Oatmeal Bars are super easy and quick to make and will last you all week! (Hopefully!) They are a perfectly light end of Summer treat..who can resist sinless sweets?! Not this pregnant lady! ๐Ÿ˜›

Cranberry Oatmeal Bars

Cranberry Oatmeal Bars

Ingredients

  • 3/4 cup whole wheat flour (4 oz)
  • 2 1/4 cup quick-cooking oats
  • 3/4 cup unpacked brown sugar
  • 1/4 tsp. salt
  • 1/2 tsp. baking soda
  • 3/4 tsp. ground cinnamon
  • 8 Tbsp smart balance butter, melted
  • 4 Tbsp orange juice
  • Cooking spray
  • 1 1/3 cups dried cranberries (6 oz)
  • 3/4 cup fat free sour cream
  • 1/3 cup Stevia (or any other no cal sweetener)
  • 2 Tbsp whole wheat flour
  • 1 tsp. vanilla extract
  • 1/2 tsp. grated orange rind
  • 1 large egg white, lightly beaten

Directions

  1. 1. Preheat your oven to 325 degrees.
  2. 2. In a medium sized bowl, whisk together the flour, oats, brown sugar, salt, baking soda, and cinnamon.
  3. 3. Add the melted butter and orange juice, mixing until crumbly.
  4. 4. Reserve about 1/3 of the mixture. Press the remaining amount into an 11x7 inch pan, prepared with cooking spray. Set Aside.
  5. 5. In a separate medium sized bowl, combine the dried cranberries, sour cream, stevia, flour, vanilla, and orange rind. Mix to combine.
  6. 6. Using a spatula spread evenly over the pressed down crust.
  7. 7. Top with the reserved oat mixture.
  8. 8. Bake in the oven at 325 degrees for 40 minutes, or until the edges are golden brown!
  9. Enjoy!
