WOW does it feel nice to have my weekends back! Ive been working overnights Saturdays for the past seven months, which means sleeping half my day away on both Saturday & Sunday, and being useless the other half of the days…blerr it sucks. But now my schedule has changed and it.is.GLORIOUS! I actually have time to spend with my fiance and family, when they have time off..it was SO nice!

Saturday night we went to the drive in! Which is perfect by the way if you need a date, with no babysitter! We got there around 7:15, the movies started at eight and we got our little guy down and sleeping across the backseat right as the first one started..it was really awesome and fun! We love going! Then our little man was extra amazing, knowing mommy and daddy were up til 130 at the movies, slept in until 11 o’clock Sunday morning. Like woah. That’s probably only the 3rd time since he was born that this has happened..again…GLORIOUS! We ended up going to brunch with my brother then spent the rest of the day at my parents house, hanging out in the hot tub, having a few drinks, and making a taco feast..it was fun..and I am so happy to be have these days back to spend with my family!

On to the most fluffiest pancakes I have ever had! Seriously..these things were incredible! So fluffy, heavenly, scrumptious…they were loaded with cinnamon, soft and squishy…topped with a dusting of confectioners sugar and pure maple syrup..and they were purely enjoyable! I made them for dinner for my little man and I when my fiance was out of town again on Friday…these babies were SO GOOD! I didn’t even need to add lots of butter, and there is hardly any sugar at all! I have leftover batter in my fridge and I can’t wait for breakfast soon! Enjoy!

Yield: 8 medium sized, 12-14 small pancakes

Cinnamon Buttermilk Pancakes (Extra Fluffy!)

Ingredients

  • 3 eggs, separated
  • 1 1/2 cups buttermilk
  • 1 teaspoon vanilla
  • 3/4 cup cake flour
  • 3/4 cup all purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons cinnamon
  • 1 Tablespoon sugar
  • 3 Tablespoons unsalted butter, melted

Directions

  1. Beat the egg yolks until they are pale and smooth, about 2-3 minutes if using a hand mixer.
  2. Beat in the buttermilk and vanilla, mixing well.
  3. Combine the flours, baking soda, baking powder, cinnamon, and sugar in a small bowl.
  4. SIFT in the dry ingredients, continuously mixing...you want the batter to be smooth, no clumps.
  5. Add in the melted butter and mix well.
  6. Take your egg whites, and with your cleaned hand mixer, beat until stiff. (You should see peaks when you pull the mixer up!)
  7. Using a rubber spatula, fold the egg whites into the batter until there are no visible whites.
  8. Allow the batter to stand for about 10-15 minutes before heating up your griddle.
  9. Heat the griddle over medium-high heat, use either butter or nonstick cooking spray and coat the bottom.
  10. Once very hot, ladle on your pancake batter..once the tops are full of bubbles, flip and allow the other side to turn golden brown.
  11. Serve with pure syrup, confectioners sugar, fresh berries, whipped cream...whatever your little heart desires!
